Moldovan Martyrs (Little Saints)
Moldovan Martyrs (Sfintișori) - A Traditional Delicacy
Moldovan martyrs are an emblematic dessert, rich in tradition, celebrating the spirit of community and faith. These sweet bread rolls, often prepared around March 9th, symbolize sacrifice and love. I invite you to discover how to prepare them with love and patience, to achieve a perfect result.
Preparation time: 20 minutes
Baking time: 25-30 minutes
Total: 55-60 minutes
Number of servings: 12-15 martyrs
Ingredients:
- 500 g wheat flour (for optimal results, use type 550 flour)
- 200 ml warm milk
- 100 g sugar (plus 2 tablespoons for the yeast)
- 1 packet of dry yeast (or 25 g fresh yeast)
- 2 large eggs
- 50 ml oil (preferably sunflower or olive)
- 1 teaspoon vanilla essence (for a refined taste)
- 1 teaspoon salt
- Zest of one lemon (for added flavor)
- 1 cup ground nuts (optional, for filling or decoration)
- Honey and cinnamon (for serving)
Instructions:
1. Start by preparing the dough. Place the flour in a large bowl, add the salt, and mix gently. It is essential not to omit the salt, as it helps develop flavors in the dough.
2. In a small bowl, dissolve the yeast with the two tablespoons of sugar in the warm milk. Let the mixture sit for 10 minutes until it becomes frothy. This step is crucial as it activates the yeast, ensuring even rising of the dough.
3. Once the yeast is activated, add it to the bowl with flour, along with the eggs, oil, vanilla essence, and lemon zest. Mix the ingredients with a spatula or by hand until a homogeneous dough forms.
4. Knead the dough for about 10 minutes on a floured surface until it becomes elastic and smooth. If the dough is too sticky, you can add a little more flour.
5. Place the dough in a clean bowl, cover it with a damp cloth, and let it rise in a warm place, away from drafts, for about 1 hour or until it doubles in volume.
6. After the dough has risen, divide it into equal portions, about 100 g each. Shape each portion into a ball, then roll it into a ribbon shape, which you can twist to achieve the specific shape of the martyrs (an 8 or a figure of a person).
7. Place the martyrs on a baking tray lined with parchment paper, leaving enough space between them. Cover them again and let them rise for 30 minutes.
8. Preheat the oven to 180°C and bake the martyrs for 25-30 minutes until they turn golden.
9. Once done, let them cool slightly, then you can brush them with honey and sprinkle cinnamon and ground nuts on top for a crunchy and flavorful touch.
Serving suggestions:
Moldovan martyrs are delicious both warm and cold. For a special culinary experience, you can serve them with fragrant tea or a glass of milk. An interesting variation is to fill them with a nut or chocolate cream, offering a surprising texture and taste.
