- 200 ml of liquid cream
- 200 g of white chocolate
- 250 g of mascarpone

- 200 g of sweet cream (over 30% fat)
- 100 ml of liquid cream

Preparation:
1. Preparing the cream:
Start by preparing the cream, as it needs to cool before being used. In a stainless steel bowl, place the liquid cream and finely chopped white chocolate. Place the bowl over a steam bath, being careful not to reach the boiling point. Stir constantly until the chocolate is completely melted and well combined with the cream. Once the mixture is homogeneous, let it cool. When it's cold, mix well and add the mascarpone, continuing to stir until you get a smooth and homogeneous cream.
2. Preparing the sponges:
While the cream is cooling, you can start preparing the sponges.
*For the white sponge:*
- In a bowl, beat the egg whites with a pinch of salt until foamy.
- Separately, in another bowl, mix the egg yolks with the sugar until it melts. Add the oil and mix for a few minutes.
- Incorporate the flour and baking powder, mixing gently.
- Finally, add the beaten egg whites, mixing with up-and-down motions to retain the air in the mixture.
- Pour the mixture into a springform pan lined with parchment paper and bake in a preheated oven at 180 degrees Celsius for 20-25 minutes or until a toothpick comes out clean. After baking, remove the sponge from the pan and let it cool.

- Repeat the same steps, but this time add cocoa to the flour mixture. Follow the same procedure with the egg whites and yolks.
- Bake the brown sponge in the same pan, at the same temperature and for the same time.
3. Preparing the whipped cream:
To make the whipped cream, mix the sweet cream with the liquid cream until you get a firm whipped cream. This will add a note of freshness to your cake.
4. Assembling the cake:
After the sponges have completely cooled, cut them into equal strips. Place a white strip followed by a brown one, and between them put a layer of cream. Continue alternating the sponges, ensuring that each layer is well soaked (for added moisture, you can use cherry syrup diluted in water) and glued with cream until all the mixture is used.
5. Decorating:
Finally, cover the entire cake with whipped cream, smoothing it out well. Sprinkle cocoa on top to create the chessboard appearance. Let the cake chill for a few hours, but if you have the patience, let it sit overnight for the flavors to meld.
