To prepare these delicious cookies with two compositions, start by ensuring you have all the necessary ingredients at hand. In a medium bowl, place the flour, making sure to sift it to avoid lumps. In the center of the flour, gradually add all the ingredients for the first composition: the egg yolks, sugar, sour cream, soft margarine, vanilla sugar, and the juice from half an orange. Use a spatula or a wooden spoon to mix the ingredients until you obtain a homogeneous and cohesive dough. Once the dough becomes uniform, start kneading it with your hands until it becomes elastic and smooth, which will take about 5-10 minutes.

After achieving the desired consistency, dust the work surface with flour where you will roll out the dough. Use a rolling pin to roll the dough into a thin sheet, about 5 mm thick. If you don't have special cookie cutters, don't worry! You can use the rim of a round glass to create various shapes. I chose to make hearts, but you can let your imagination run wild.

After cutting the dough shapes, carefully place them on a greased baking tray, ensuring to keep a distance between them, as they will puff up during baking. While you are working with the shapes, preheat the oven to a low temperature so that the cookies bake evenly.

Now it’s time to prepare the second composition. In a separate bowl, beat the egg whites with a pinch of salt using an electric mixer until you obtain a firm foam. Gradually add the sugar and vanilla sugar, continuing to mix until the sugar is completely dissolved and the mixture becomes shiny. Finally, add the juice from the other orange and gently fold it in with a spatula, so as not to destroy the airy structure of the foam.

Take the dough shapes from the tray and use a piping bag or a spoon to add a generous layer of the second composition over each shape. For a delicious surprise, you can place a piece of Turkish delight on top of each cookie. Once you have finished preparing the cookies, place the tray in the oven and bake them on low heat until the meringue layer turns lightly golden, which will take about 15-20 minutes.

After the cookies are baked, carefully remove them from the tray and let them cool on a rack. Their enticing aroma will fill the entire room, and when you taste them, you will feel the perfect combination of textures and flavors. These cookies are ideal to be enjoyed alongside a cup of tea or coffee, being perfect for both special occasions and for indulging on ordinary days.

 Ingredients: First mixture: 2 egg yolks, 5 tablespoons of sugar, 5 tablespoons of sour cream, 250 g of margarine at room temperature + margarine for greasing the tray, flour as needed (approximately 500 g), a packet of vanilla sugar, juice from half an orange. Second mixture: 2 egg whites, 8 tablespoons of sugar, a packet of vanilla sugar, juice from the other half of the orange, a pinch of salt, 3-4 pieces of Turkish delight.
