Ingredients:

For the sponge:
- 5 eggs
- 220 g sugar
- 1 packet of vanilla
- Zest of one lemon
- 200 ml sunflower oil
- 200 g flour 00
- 50 g starch
- 1 packet of baking powder
- 200 ml limoncello

For the limoncello soak:
- 200 ml limoncello
- 100 ml water
- 2-3 tablespoons sugar (to taste)

For the pastry cream:
- 3 egg yolks
- 120 g sugar
- 80 g starch
- 500 ml milk
- 2 tablespoons limoncello

For the chocolate cream:
- 2 tablespoons pastry cream
- 100 g milk chocolate
- 2-3 tablespoons whipped cream with powdered sugar
- 2 tablespoons rum

For decoration:
- 2 large ripe peaches
- 1 packet of gelatin
- 1 black grape
- Leftover 200 ml whipped cream with 50 g powdered sugar

Step by step:

1. Preparing the sponge: Start by separating the eggs. Beat the egg whites with 120 g of sugar and a pinch of salt until you get a stiff, glossy foam. This is the secret to a fluffy sponge. In another bowl, beat the egg yolks with 100 g of sugar until they become a smooth cream. Add the sunflower oil, lemon zest, and vanilla. Mix well.

2. Combining the ingredients: Gently fold the egg yolk mixture into the egg white foam, being careful to mix with light up-and-down motions to avoid losing air in the mixture. Sift the flour, starch, and baking powder, then gradually add them to the egg mixture, continuing to mix gently. Finally, add the limoncello and mix again.

3. Baking the sponge: Grease and flour a cake pan, then pour the mixture into the pan, being careful not to overdo it. Bake in a preheated oven at 180 degrees Celsius for 40 minutes. Check if it is done by inserting a skewer in the middle; if it comes out clean, the sponge is perfect.

4. Cooling: Once the sponge is done, let it cool completely on a rack.

5. Preparing the pastry cream: In a bowl, beat the egg yolks with 120 g of sugar, then add the starch and vanilla. Heat the milk in a saucepan. Add the egg mixture to the milk, stirring constantly to avoid lumps. Place the saucepan on the heat and stir until the cream thickens. Turn off the heat and let the cream cool. Add 2 tablespoons of limoncello to enhance the flavor.

6. Preparing the chocolate cream: In a bowl, melt 100 g of chocolate using a double boiler. Add 2 tablespoons of warm pastry cream and 2 tablespoons of rum. Mix well to get a smooth cream. Then, fold in 2-3 tablespoons of whipped cream.

7. Assembling the cake: Cut the sponge into 1 cm discs. Soak each disc with the limoncello soak (200 ml limoncello + 100 ml water + sugar to taste). Place one disc on a serving plate, add a layer of pastry cream, then another sponge disc, followed by the chocolate cream, and continue with another sponge disc. Finish with whipped cream.

8. Decorations: Peel the peaches and cut them into thin slices. Arrange the peach slices on the cake, forming a beautiful pattern. In the center, place a black grape for contrast. Prepare the gelatin according to the instructions on the packet and spoon it over the peaches to give them a shiny appearance.

9. Finishing: Remove the sides of the cake pan and apply whipped cream evenly on all sides of the cake. Let the cake rest in the fridge for a few hours to set and allow the flavors to develop.

10. Serving: Slice and serve with love. This Sunday Peach Cake is perfect alongside a cup of tea or a glass of limoncello, to highlight the citrus notes of the dessert.

Helpful tips:
- Ensure all ingredients are at room temperature for a uniform texture.
- If you prefer a taller cake, you can double the quantities for the sponge and creams.
