If you are looking for a pasta recipe that combines seemingly unusual ingredients in an extraordinary way, you have come to the right place! Spaghetti with leeks and chicken livers is a perfect choice for a quick, healthy, and flavorful dinner. This combination may seem strange at first glance, but I assure you that the final result will exceed your expectations. Let's discover together how to prepare this savory dish!

Preparation time: 15 minutes
Cooking time: 20 minutes
Total time: 35 minutes
Number of servings: 4

Ingredients:
- 300 g spaghetti
- 2 leeks (preferably thinner and raw)
- 400 g chicken livers
- 4 cloves of garlic
- 150 g peeled tomatoes in juice
- 100 ml tomato juice
- oregano (to taste)
- 2-3 sprigs of fresh dill
- salt (to taste)
- pepper (to taste)
- a pinch of nutmeg
- 50 ml white wine
- 3-4 tablespoons of olive oil

Preparation:

1. I started by boiling the spaghetti. Bring a large pot of water to a boil and add a generous tablespoon of salt. When the water starts to boil, add the spaghetti and cook according to the package instructions until al dente. Once done, drain and set aside.

2. While the pasta is boiling, we can prepare the sauce. In a deep skillet, heat 2 tablespoons of olive oil over medium heat. Add the 4 minced garlic cloves and sauté for about 1-2 minutes until golden and fragrant. Be careful not to burn them, as burnt garlic can give a bitter taste.

3. Now, add the sliced leeks to the skillet. The leeks will add a natural sweetness to the sauce. Stir well and let them sauté for 3-4 minutes until they become slightly soft.

4. Next, add the peeled tomatoes in juice and the tomato juice. Also add oregano, salt, pepper, and a pinch of nutmeg. Let the sauce simmer over low heat for about 10 minutes to allow the flavors to develop beautifully.

5. In a non-stick skillet, add 2 tablespoons of olive oil and heat over medium heat. Add the chicken livers, which should be well washed and drained. Sear them until browned on both sides, about 3-4 minutes.

6. After the livers are browned, add the white wine and the 2 garlic cloves cut in half. Let everything simmer until the liquid has completely evaporated, and the livers become tender and flavorful.

7. The last step is to combine the pasta with the sauce. Add the cooked spaghetti to the skillet with the leek sauce and mix well. Let them cook together for 3 minutes to blend the flavors. Finally, add the chopped dill and mix again.

8. Serve the spaghetti with plenty of tomato sauce and livers on top. You can add some grated Parmesan for extra flavor if you like!

Useful tips:
- Make sure the livers are fresh, as their quality can significantly affect the final taste of the dish.
- You can experiment with other spices, such as basil or thyme, to give a personal touch to the recipe.
- If you don't have white wine on hand, you can substitute it with white wine vinegar, but use it sparingly so as not to overpower the other flavors.
- You can also add some vegetables, such as carrots or bell peppers, to the sauce to enrich the dish.

Nutritional benefits:
This recipe is an excellent source of protein due to the chicken livers, which are rich in iron and B vitamins. Leeks add dietary fiber and antioxidants, while tomatoes provide lycopene, a powerful antioxidant. Additionally, the pasta completes this dish with healthy carbohydrates.

Frequently asked questions:
- Can I substitute chicken livers with another type of meat?
Yes, you can try using beef liver, but the cooking time may vary. You can also opt for diced chicken or turkey.
- How can I make the sauce spicier?
By adding a little chili pepper or red pepper flakes, you can give the sauce a spicy kick, perfect for lovers of flavorful dishes.
