Dulce de Leche
The can of condensed milk is opened, and the contents are carefully poured into a large glass bowl, ideally tall. This choice is not random, as condensed milk tends to foam abundantly, and a taller bowl will prevent potential spills. The entire process takes between 10 and 15 minutes, depending on the power of the microwave. For me, for example, it only took 10 minutes, which is an excellent time.
The bowl with the condensed milk is placed in the microwave, setting it for the first 2 minutes. It is important to work in batches of 2 minutes. After this interval, we carefully remove the bowl and mix the composition with a whisk; ideally, you should use grandma's whisk, which has a history of use and efficiency in the kitchen. After mixing, the bowl is placed back in the microwave.
Here it becomes crucial to be extremely careful; we watch closely through the oven's window, as the milk will swell considerably. Every 5-7 seconds, it is necessary to stop the microwave and mix again. This step is repeated about 4 times, totaling 8 minutes of work. In the end, we should achieve a cream with fine lumps, caramelized in color, with a viscous consistency. Be careful, as in just a few seconds, the preparation can burn, and if this happens, you will have to give up and start over.
After the 8 minutes, we mix the composition well with the whisk, and at this moment, the cream should be perfectly homogenized, having a uniform and appetizing appearance. If you want a softer dulce de leche sauce, it can be successfully used for decorating ice cream or cakes. However, if you want a thicker consistency, you will need to heat it a little longer.
Now, there are various options for this delicacy. It can be kept in a jar, caramels can be made from it, or it can be reheated to obtain a dulce de leche mousse. I chose to prepare a cake with chocolate mousse and dulce de leche mousse that was simply divine.
The mousse preparation is done by mixing the cream obtained from boiling the milk with gelatin, which has been soaked in warm water until completely melted, and with whipped cream. The quantities are not fixed, as they depend on everyone's preferences regarding the concentration and volume of mousse desired. It is a true art to achieve the perfect proportions, but the final result will surely be spectacular and worth every effort.
