Preparation time: 30 minutes
Baking time: 1 hour
Total time: 1 hour and 30 minutes
Number of servings: 10-12
Ingredients:
*For the cake base:*
- 200 g unsalted butter, at room temperature
- 450 g flour
- 4 teaspoons baking powder
- a pinch of salt
- 300 g granulated sugar
- 2 teaspoons vanilla extract
- 4 large eggs, at room temperature
- 225 ml milk
*For the milk and egg cream:*
- 200 ml heavy cream
- 50 g granulated sugar
- a pinch of salt
- 75 ml milk
- 1 tablespoon cornstarch
- 2 large eggs
- 1 teaspoon rum extract
*For the chocolate glaze:*
- 85 g dark chocolate
- 30 g butter
- 60 ml heavy cream
- 60 g powdered sugar
- 1 teaspoon vanilla extract
Preparation:
1. Preparing the oven and baking pans:
Start by preheating the oven to 180 degrees Celsius. This is an essential step, as a constant temperature ensures even baking. Use 23 cm cake pans, greasing them with a little butter and dusting with flour to prevent sticking.
2. Preparing the batter:
Sifting the flour, baking powder, and salt into a large bowl is an important step, as it helps aerate the ingredients and achieve a fluffy cake base. In another bowl, beat the butter with the sugar until you obtain a creamy and light-colored mixture. Add the vanilla extract and incorporate the eggs, one at a time, mixing well after each addition.
Now, it’s time to combine the dry ingredients with the wet ones. Alternate adding the flour mixture with the milk, making sure to mix well after each addition. Once you have a smooth batter, divide it into 3 equal parts.
3. Baking the layers:
Pour each portion of batter into the prepared pan and bake in the oven for 20-30 minutes, until they pass the toothpick test (the toothpick should come out clean). After removing them from the oven, let them sit in the pans for 5 minutes, then invert onto a rack to cool completely.
4. Preparing the cream:
For the filling, heat the heavy cream in a saucepan over medium heat until it starts to simmer at the edges. Add the sugar and salt, stirring until dissolved. In a separate bowl, mix the milk with the cornstarch, then incorporate the eggs. Gradually pour this mixture into the hot cream, stirring continuously over low heat until the cream thickens and is smooth (about 5 minutes). Let the cream cool, stirring occasionally to prevent a skin from forming.
5. Preparing the chocolate glaze:
In a heavy-bottomed pot, combine the dark chocolate, butter, and heavy cream over low heat, stirring constantly until smooth. Once the chocolate has completely melted, remove the pot from the heat and add the powdered sugar and vanilla extract. Let the glaze cool, stirring occasionally.
6. Assembling the cake:
Now that all components are ready, it’s time to assemble the cake. Spread half of the cooled cream over the first layer, followed by the second layer and more cream. Place the final layer on top, then pour the chocolate glaze evenly, allowing it to drip slightly over the edges for an appetizing look.
7. Serving:
Boston cream pie is served after it has cooled completely, allowing the flavors to meld. It’s delicious alongside a fragrant coffee or a fruit tea. You can also add some fresh fruits or a scoop of ice cream for a contrast of textures and flavors.
Helpful tips:
- Ensure that the ingredients are at room temperature for a smooth mixture.
- You can use white chocolate or milk chocolate for a different glaze, thus adapting the recipe to your tastes.
- If you desire a more intense flavor, you can add a splash of orange or lemon extract to the milk cream.
- The cake can be stored in the refrigerator for up to 3 days, but it is just as good the next day when the flavors have had time to meld.
Frequently asked questions:
- Can I replace the butter with oil? It is recommended to use butter for a richer flavor, but you can experiment with coconut oil or olive oil for a healthier option.
- How can I make the cake less sweet? Reduce the amount of sugar in the batter and glaze, but make sure it doesn’t affect the cake’s structure.
- What drinks pair well with this cake? A strong coffee or a fragrant herbal tea pairs perfectly with the sweetness of the cake.
Boston cream pie with milk cream and chocolate glaze is not just a simple dessert, but a culinary experience that will surely bring joy in every bite. So, put on your chef's attire and get ready to impress with this delicious recipe!
