Let the pastry sheets thaw completely, ensuring they are at room temperature for easier handling. We start preparing the delicious filling. In a large bowl, mix the telemea cheese, which can be grated or crumbled well, with the cottage cheese. This combination will give the filling a creamy texture and rich flavor. Next, incorporate the heavy cream or full-fat yogurt, eggs, and baking powder. Use a spatula or whisk to homogenize the mixture, ensuring all ingredients are well integrated. If you want a fluffier filling, add a bit more cream or yogurt to achieve a more liquid consistency. Once the mixture is well homogenized, set it aside to work on the pastry sheets.

Generously grease a baking dish or oven-safe dish with butter or margarine, making sure to cover all corners well to prevent sticking. Sprinkle a thin layer of breadcrumbs on the bottom of the dish, which will help absorb excess moisture and provide a crispy texture. Melt the remaining butter or margarine and let it cool slightly. We start assembling the pie by placing three sheets of pastry on the bottom of the dish, each drizzled with melted butter, ensuring the edges of the sheets rise along the sides of the dish.

Add the prepared filling, letting it flow through the tines of a fork for even distribution. Continue placing three sheets of pastry, but this time crinkle them slightly to achieve a fluffy texture. Repeat this layering process of sheets and filling until all ingredients are used, ensuring the last layer consists of three sheets of pastry. Before placing the final sheets, bring the edges of the pampered sheets towards the center so that the filling does not leak out. Place the last three crinkled sheets on top to finish the dish.

If you do not have enough butter or margarine for all the sheets, feel free to use oil. Drizzle the top sheet with butter and carefully pour ½ cup of cold water over the pie. Preheat the oven to 180 degrees Celsius and place the pie in to bake for about 40 minutes, reducing the temperature to 150 degrees after the first 15 minutes. After about 30 minutes, pour a topping made from a mixture of sour cream and egg to add an extra layer of creaminess. Let the pie simmer until it is baked and nicely browned on top. Once removed from the oven, let the pie rest for 20 minutes covered, to soften slightly and remain a bit moist, ready to be cut and served. Enjoy each slice and savor the delicious flavors!
