Cheese and Raisin Pie
To prepare a delicious cheese pie, start by taking fresh cheese, which should be well-drained to prevent the pie from becoming too watery. Use cottage cheese or ricotta cheese, which will provide a creamy texture and pleasant taste. Place the cheese in a large bowl and mix it with the beaten eggs and sugar until the mixture becomes homogeneous and slightly airy. This mixture will form the base of the pie.
Once you have a well-bound mixture, add the raisins, which will provide an extra sweetness and flavor. It is recommended to soak them in warm water or rum for about 15-20 minutes before adding them, so they become softer and more aromatic. Continue with the vanilla essence and grated lemon zest, which will enhance the aroma of the pie. These ingredients bring a note of freshness and flavor balance.
If the mixture is too fluid, you can add one or two tablespoons of semolina, which will help absorb the excess moisture and give structure to the pie. Make sure to mix well so that the semolina integrates evenly into the composition.
Next, prepare the baking tray. Place the first sheet of dough in the tray lined with baking paper, making sure to spread it evenly. Pour the cheese mixture over the first sheet, leveling it with a spatula to achieve a smooth surface. Then, cover with the second sheet of dough, which you will prick here and there with a fork to allow the steam to escape during baking.
To achieve a golden and appetizing crust, brush the top of the pie with a mixture of beaten egg and sour cream, which will add a rich and creamy layer. Preheat the oven to 180 degrees Celsius and place the pie inside, letting it bake for about 35-40 minutes or until it becomes golden and nicely browned.
Once the pie is ready, remove it from the oven and let it cool slightly before slicing. This cheese pie is perfect both warm and cold, and can be served plain or alongside a fruit sauce or a dollop of sour cream. Enjoy every bite and savor the delicious flavors you have created!
