Stuffed zucchini is a delicious and healthy choice, perfect for a light lunch or a savory dinner. We start by peeling the zucchinis, choosing fresh, medium-sized specimens that will cook evenly. After peeling them, we cut the zucchinis in half lengthwise and carefully scoop out the flesh using a spoon. This flesh can be saved for later use in other dishes, such as soups or purees.

In a frying pan, we add a little oil and begin to sauté the finely chopped onion along with the grated carrot and diced bell pepper. We let the vegetables brown over medium heat for about 10 minutes, stirring occasionally to prevent sticking. Once the vegetables have softened, we add soy granules, which will provide an interesting texture and a hint of flavor to the dish. We pour enough water to cover the ingredients and let it boil for 10 minutes. This delicious filling will be used to stuff the zucchinis.

Meanwhile, we prepare the sauce. Fresh tomatoes, grated, are placed in a pan with a little oil and cooked for 10 minutes until they become a homogeneous and tasty mixture. Finally, we add breadcrumbs, which will help the sauce become thicker and stick nicely to the zucchini filling.

Once the filling is ready, we fill each half of the zucchini with the vegetable and soy mixture. We place the zucchinis in a baking dish and add water mixed with a little Delikat, filling the dish up to halfway of the zucchinis. This will help with even cooking and add a pleasant flavor. We place the dish in the preheated oven and let it bake. After 10 minutes, we drizzle the zucchinis with olive oil and sprinkle dried oregano for an extra flavor.

When the zucchinis are nearly done, we grate feta cheese or cheese on top of them, allowing them to brown for a few more minutes. The dish will achieve a golden and appetizing crust, and the flavors will combine into a delicious symphony.
