My Homemade Noodles
Ingredients: 100 g Flour 1 Egg Salt
I named them "my own" because I managed to invent a preparation method that transforms the cooking experience into a pleasure, without facing the inconveniences of dough sticking to my hands. Although many of us love to play with dough, I have a true aversion to those moments when the dough becomes a sticky mass, getting under my nails and causing general discomfort. So, instead of adding water and complicating things, I decided to work with my hands only after the dough started to behave properly.
We start by mixing the flour with a little salt to give it an even taste. Then, in the middle of this flour, we crack a fresh egg. Using a wide knife, we begin to mix the ingredients. With the flat side of the knife, we spread the dough, and with the edge of it, we detach the dough from the work surface. This stretching followed by detaching motion is repeated patiently until the dough becomes non-sticky and looks promising. It is a fascinating process that, through the applied technique, has allowed me to avoid mess and frustration.
After about half an hour of resting, the dough becomes more pliable. This is where the most interesting part comes in: now we can add more eggs, depending on the desired amount of noodles. At this stage, the dough no longer sticks to the knife or the work surface, and thus, we can continue easily. I prefer not to knead the dough in the traditional way. Instead, I lift it, gently slam it on the table, and twist it a little, all without making it sticky. This way, I manage to keep my hands clean and avoid any interaction with the sticky dough.
Once the dough is well prepared, we let it rest again. Then, we carefully roll it out until it becomes transparent. It is important to use a brush to remove excess flour, so we don’t complicate our lives. After it has dried a little, we roll it up and cut it according to our preferences. Whether we choose thin or thicker noodles, the result will always be delicious. This simplified and efficient method allows me to enjoy making noodles without having to deal with the inconveniences of sticky dough, turning each cooking session into a true pleasure.
