Instructions
1. Sponge
1.1. Separate the egg whites from the yolks.
1.2. Beat the egg whites with a pinch of salt until soft peaks form. Gradually add the sugar in three batches, continuing to beat until glossy and firm.
1.3. In a separate bowl, mix the yolks with the oil, like making mayonnaise. You can mix it by hand or with a wooden spoon. Finally, add the 2 tablespoons of water and the lemon zest.
1.4. Pour the yolks over the meringue without mixing immediately.
1.5. Sift the flour on top. Now gently fold everything together from the bottom up, being careful not to deflate the mixture. It should remain airy.
1.6. Pour everything into a large baking tray lined with parchment paper. Level the sponge with a spatula.
1.7. Bake for 35-40 minutes in a preheated oven at medium heat. Test with a toothpick – it should come out clean.
1.8. Let the sponge cool completely in the tray. Once cooled, slice it horizontally to create two layers.
2. Caramel cream
2.1. In a saucepan, place the sugar over heat and let it melt without stirring too much until it reaches a caramel color.
2.2. Add the margarine cut into pieces, stirring quickly, then gradually pour in the sour cream and milk. Be careful – it will bubble up, so use a deep pot.
2.3. Stir until well combined, then remove from heat.
2.4. Add the walnuts and hazelnuts (roasted and chopped beforehand). Mix well.
2.5. Spread the caramel cream over the first wafer (placed on a work surface). Smooth out the layer.
2.6. Place the second wafer on top of the caramel. Gently press down with your hand to adhere.
3. Chocolate cream
3.1. Melt in a double boiler: cooking chocolate, margarine, liquid cream, and chocolate spread. Stir until you achieve a smooth mixture.
3.2. If the cream is too thick or sweet, you can dilute it with a bit of liquid cream (I do this every time, it helps a lot with spreading).
3.3. Let the cream cool slightly, but not completely, or it will harden and won’t spread nicely.
