Preparation time: 30 minutes
Cooking time: 20 minutes
Total time: 50 minutes
Servings: 4
Ingredients
For the dough:
- 2 large eggs (approximately 100 g)
- 150 g flour
- 50 g semolina
- 30 ml butter or margarine
For the filling:
- 200 g veal (or pork, to taste)
- 50 g onion, finely chopped
- 2 tablespoons butter
- 1 egg
- A pinch of pepper
- 20 g flour
- Salt, to taste
For the sauce:
- 3 tablespoons butter
- 25 g flour
- 300 ml tomato juice
- 1 small onion, grated
- Dill and celery, finely chopped (optional)
Preparation
Step 1: Prepare the filling
Start by finely chopping the veal and onion. In a frying pan, melt 2 tablespoons of butter over medium heat and add the onion. Sauté the onion for one minute, then add the minced meat. Season with salt and pepper. Cover the pan and let the meat cook on low heat for about 30 minutes, stirring occasionally. When the meat is well cooked and all the water has evaporated, remove the pan from the heat and let the mixture cool.
Once the meat mixture has cooled, add the egg and flour, mixing well. You can also add a teaspoon of finely chopped dill or parsley for extra flavor.
Step 2: Prepare the dough
In a large bowl, crack the two eggs and mix them with the melted butter. Add the flour and semolina, mixing with a spatula or by hand. Knead the dough for about 5 minutes until it becomes elastic and no longer requires flour. It is important that the dough is slightly softer than that for noodles.
If the eggs were larger, you may need more flour, and if they were smaller, you can add a little water to achieve the desired consistency.
After kneading, let the dough rest for 10 minutes, covered with a damp towel, to relax and stretch more easily.
Step 3: Form the dumplings
Roll out the dough on a floured surface until you get a rectangular sheet about 2 mm thick. Cut the dough into 5 cm squares. Place a teaspoon of the meat filling in the center of each square of dough.
Fold the square into a triangle, pressing the edges well with your fingers or a fork to ensure that the filling does not escape while boiling. If the dough has dried out, lightly moisten the edges with water to help it stick.
Step 4: Boil the dumplings
Put a large pot of water to boil. When the water is boiling, add the dumplings, stirring immediately with a spoon to prevent them from sticking to the bottom of the pot. Boil the dumplings for 20 minutes over medium heat, with the lid slightly open.
After 20 minutes, turn off the heat and let the dumplings sit in the water for 30 minutes to fill with air and become fluffier.
Step 5: Prepare the sauce
In a separate pot, melt the 3 tablespoons of butter and add the grated onion. Sauté the onion for one minute, then add the flour, mixing well. Gradually add the tomato juice and stir until the sauce becomes smooth. You can add a teaspoon of sugar to balance the acidity of the tomatoes.
For extra flavor, add finely chopped dill and celery. The sauce should have a consistency similar to thin sour cream.
Step 6: Finalize and serve
After the dumplings have rested in the water, remove them with a slotted spoon and place them in a heat-resistant dish greased with a tablespoon of butter. Add a few pieces of butter on top and place the dish in a preheated oven at 180 degrees Celsius for 10 minutes to lightly brown.
Serve the dumplings hot, covered with tomato sauce and sprinkled with chopped herbs. These meat dumplings are perfect alongside a fresh salad or creamy sour cream to complement the dish.
Helpful tips
