This recipe combines a fluffy dough with various fillings, leaving room for creativity. I will show you step by step how to achieve perfectly golden, fragrant, and appetizing croissants.

Ingredients:

- 25 g fresh yeast
- 200 ml lukewarm water
- 100 ml lukewarm milk
- 100 g melted butter (plus extra for greasing)
- 100 g sugar
- 1 teaspoon salt
- 450 g flour (about 3 ½ cups)
- 2 eggs
- Filling of choice (fruit jam, chocolate, sweet cheese, caramelized nuts)

Preparation instructions:

1. Activating the yeast: In a small bowl, dissolve the yeast in the lukewarm water. Make sure the water is not too hot, as this could kill the yeast. Let the mixture sit for 5-10 minutes until it becomes frothy.

2. Preparing the dough: In a large bowl, add the activated yeast, lukewarm milk, melted butter, sugar, and salt. Mix well to combine the ingredients. Then, gradually add the flour, starting with 1 ½ cups, stirring constantly to achieve a smooth mixture.

3. Adding the eggs: Beat the two eggs and incorporate them into the dough. Continue adding flour, half a cup at a time, until the dough becomes elastic and easy to handle. This may require about 350-400 g of flour in total.

4. Kneading the dough: Transfer the dough to a floured work surface. Knead the dough for about 10 minutes until it becomes smooth and elastic. This step is essential for developing the gluten, ensuring that the croissants will be fluffy and airy.

5. Proofing the dough: Place the dough in a greased bowl, cover it with a damp towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.

6. Shaping the croissants: Once the dough has risen, divide it into 2 or 3 equal parts. Roll each part into a thin sheet, then cut triangles. Place a teaspoon of your chosen filling at the base of each triangle and roll it towards the tip, forming croissants.

7. Second proofing: Place the croissants on a baking tray lined with parchment paper, cover them again, and let them rise for 30 minutes.
