Homemade Tagliatelle

 Ingredients: We need: - half a kg of flour - salt - 3 eggs

To prepare a delicious homemade tagliatelle platter, we start by making the dough. We take a generous amount of high-quality flour and place it on the work surface or, if you have one, on a special kneading board. We shape the flour into a mound, making sure to leave a space in the middle, like a crater. Here, we add the eggs that we previously whisked with a pinch of salt to enhance the dough's flavor.

Using a fork or our fingers, we begin to slowly mix the flour with the eggs, bringing flour from the edges towards the center. Once we have a homogeneous mixture, we will knead the dough vigorously until it becomes elastic and smooth. It is important to dedicate a good few minutes to this process to activate the gluten in the flour and achieve a perfect dough.

After we finish kneading, we let the dough rest. We roll the dough into a large, even circle and cover it with a clean towel for about thirty minutes. This resting period is essential as it allows the gluten to relax, making cutting and shaping easier.

Once the dough has rested, we take the sheet and fold it into quarters. Using a sharp knife or a special pasta cutter, we cut thin strips along the square, to the desired size for tagliatelle. Make sure the strips are uniform for even cooking.

We served the freshly made tagliatelle with a homemade basil pesto that we lovingly prepared in a mortar. The pesto, with its vibrant flavors of fresh basil, nuts, and olive oil, enriches every strand of pasta. We also added a bit of cream to create a creamy texture and a richer taste.

In the end, we sprinkled a generous layer of grated Parmesan on top, which will melt slightly upon contact with the heat of the pasta, adding an unmistakable flavor. Serve the tagliatelle immediately, alongside a fresh green salad and a glass of white wine, to complete this unforgettable culinary experience! This recipe not only brings an authentic Italian taste to your kitchen but also provides a unique pleasure of making food with your own hands.
