Vegetable Stew with Spicy Sausages
To prepare a delicious vegetable and sausage stew, the first step is to carefully clean the vegetables. It is essential that all ingredients are fresh to achieve a savory dish. We take a large onion, peel it, and slice it thinly, then we focus on a bell pepper, which we clean and cut into small cubes. The next ingredient on our list is mushrooms, which we wash carefully and chop finely, and finally, we take care of the potatoes, peeling and also cutting them into cubes.
In a deep pot, we heat the oil, preferably sunflower or olive oil, for a more refined taste. Once the oil reaches the optimal temperature, we add the chopped onion and let it sauté, stirring occasionally to prevent it from sticking to the bottom of the pot. The golden color of the onion will add a special aroma to our dish. After a few minutes, when the onion becomes translucent, we add the chopped bell pepper, mixing to combine the flavors.
Then, it’s time to introduce the sausages, cut into not very thick slices, to ensure they cook evenly. Optionally, we can use smoked sausages for a more intense flavor. The chopped mushrooms also go into the pot, followed by the cubed potatoes. We let everything sauté together for about 5-7 minutes, stirring constantly so that the vegetables coat in oil and release their flavors.
After we have sautéed the vegetables and sausages well, we add a cup of water. It is important that the water is warm or at room temperature to avoid lowering the temperature of the dish. We cover the pot and let it simmer over medium heat, stirring occasionally to ensure that the vegetables do not stick to the bottom. We wait for it to boil until the potatoes become tender.
Once all the ingredients are cooked, it’s time to add the spices. We sprinkle in some vegetable seasoning, freshly ground pepper to taste, and tomato paste, which will add a note of acidity and a vibrant color to the stew. We let it boil again, stirring well to integrate all the flavors. Finally, we add the freshly chopped parsley, which will bring an extra freshness to our dish.
