- 700 ml milk
- 70 g cornstarch
- 150 g sugar
- 50 g white chocolate
- 200 g butter
For the chocolate cream:
- 100 g dark chocolate
- 50 g white chocolate
- 100 g butter
- 4 tablespoons liquid cream
For the syrup:
- 100 g sugar
- 100 ml water
For decoration:
- 50 g dark chocolate
- 100 ml liquid cream
- whipped cream
- red coconut (for decoration)
Preparation:
Step 1: Preparing the sponge
1. Start by separating the egg whites from the yolks. Ensure that the bowl for the egg whites is clean and dry to achieve perfect foam.
2. Beat the egg whites with a pinch of salt until they form stiff peaks. Gradually add the sugar, continuing to mix until the mixture becomes glossy and firm.
3. In another bowl, mix the yolks with the oil and rum essence, as if preparing mayonnaise. Then, pour this mixture over the egg white meringue, gently folding with a spatula.
4. In a separate bowl, combine the flour, cocoa, cornstarch, and baking powder. Gradually add the dry ingredients to the egg white mixture, being careful not to lose the air in the meringue.
5. Divide the mixture into 3 baking trays lined with parchment paper (25/35 cm) and bake in a preheated oven at 180°C for 30-35 minutes. Check with a toothpick; if it comes out clean, they are done. Let them cool.
Step 2: Preparing the milk cream
1. Mix the cornstarch with 50 g of sugar and add 100 ml of milk, stirring until you obtain a smooth mixture without lumps.
2. In a saucepan, add the remaining milk and white chocolate. Heat on low and stir until the chocolate is completely melted.
3. Once the chocolate is fully melted, add the cornstarch mixture and continue to stir until the cream thickens. Let it cool.
4. Beat the soft butter with the remaining powdered sugar and incorporate it into the milk cream, mixing gently.
Step 3: Preparing the chocolate cream
1. Break the dark chocolate into pieces and place it in a bowl along with the butter and liquid cream. Melt over a double boiler or in the microwave, stirring well to achieve a smooth mixture.
2. Let it cool.
Step 4: Preparing the syrup
1. Caramelize the sugar until it turns golden, then add water to extinguish it. Let it cool.
Step 5: Assembling the cake
1. From the 3 cooled sponge layers, cut out hearts of different sizes: 2 large, 2 medium, and many small ones.
2. On the first sponge layer, soak it with the caramel syrup and add a layer of milk cream, followed by a layer of chocolate cream. Place in the freezer for a few minutes to firm up.
3. Add another layer of milk cream and cover with the second sponge layer, which should also be soaked.
4. Decorate the cake with whipped cream and melted chocolate.
