Lemon Cookies: a delicious and simple recipe

These lemon cookies are a quick and tasty dessert, perfect for adding a touch of freshness at any time of the day. With a slightly crunchy texture and a vibrant lemon flavor, these treats are sure to please everyone. Additionally, the preparation process is simple, so even those with less kitchen experience can easily manage. This recipe makes about 20 servings, and the total preparation time is approximately 1 hour.

Necessary ingredients:

- 250 g flour
- 180 g butter (at room temperature)
- 200 g sugar
- 1 egg
- Juice and zest of one lemon (about 50 ml juice and 1 teaspoon grated zest)
- 1 teaspoon baking powder
- 1 packet vanilla sugar
- Lemon essence (optional, for an even more intense flavor)
- Lemon jam or your favorite fruit preserves (for filling, optional)

Step by step for perfect cookies:

1. Preparing the dough: In a large bowl, add the softened butter and sugar. Using a mixer or spatula, mix until you achieve a fluffy, pale white cream. This step is essential to ensure a light texture of the cookies.

2. Flavoring: Add the vanilla sugar, grated lemon zest, and, if desired, the lemon essence. These ingredients will enhance the flavor and turn the cookies into a true explosion of taste.

3. Incorporate the egg: Add the egg and mix well, ensuring it is completely incorporated into the mixture.

4. Flour and baking powder: In another bowl, mix the flour with the baking powder. Gradually add the flour mixture to the wet ingredients, mixing with a spatula or by hand until you obtain a homogeneous dough. If the dough is too sticky, feel free to add a tablespoon or two of flour.

5. Resting the dough: Cover the bowl with plastic wrap and let the dough rest in the refrigerator for at least 30 minutes. This step helps to firm up the dough, making it easier to work with.

6. Shaping the cookies: Preheat the oven to 180°C. On a floured surface, roll out the dough to a thickness of about 0.5 cm. Using cookie cutters, cut out various shapes, such as stars or hearts.

7. Baking: Place the cookies on a baking tray lined with parchment paper or greased with butter. Bake for 10-15 minutes, but be careful not to wait until they turn yellow. The cookies are ready when they become slightly golden around the edges. Once removed from the oven, they will appear fluffy but will harden as they cool.

8. Decoration and serving: Once completely cooled, you can add a simple glaze made from powdered sugar mixed with lemon juice. For a festive look, stick some cookies together with lemon jam or your favorite preserves. This sweet and tangy note will perfectly complement the lemon flavor.

Possible variations: If you want to experiment, try adding chopped nuts or coconut flakes to the dough for an extra texture. You can also use different types of jam or preserves, depending on your preferences.

These lemon cookies are ideal to be served alongside a cup of tea or coffee, but they can also be a sweet gift for loved ones. Enjoy every bite of this simple and delicious recipe that will bring joy and freshness to any occasion!

Butter at room temperature is mixed with sugar until a fluffy cream is obtained, and vanilla sugar and lemon zest are added. The egg and lemon juice are added and everything is mixed well. Then, flour mixed with baking powder is added and kneaded until a suitably firm dough is obtained (if needed, more flour can be added, depending on the type of flour and how much lemon juice you put in). The dough is left to rest in the refrigerator for at least 30 minutes, after which it is rolled out on the work surface. Various shapes are cut from the dough, in my case, stars and hearts. The formed cookies are placed on a buttered tray and baked in the oven for 10-15 minutes. Do not wait for the cookies to turn yellowish as it will ruin their appearance. When you take them out of the oven, they will be very fluffy, but after cooling, they become crunchy. I topped them with a glaze made from powdered sugar and lemon juice, and some I stuck together with lemon jelly. You can replace the jelly with your favorite fruit jam. Other recommended recipes:
