To create a truly delicious dessert, we will prepare a cake with fluffy layers and fresh fruit fillings, combining the flavors of strawberries, mandarins, and kiwi. This cake will not only delight the taste buds but will also bring a splash of color to your table.

We start by preparing the layers. We will use two equal-sized trays to achieve an even structure for the cake. In a large bowl, we will mix the egg whites with a pinch of salt. It is important that the egg whites are at room temperature to whip better. Once the egg whites become stiff, we gradually add the sugar, continuing to mix until we obtain a glossy meringue. In another bowl, we beat the egg yolks with the oil until they become a smooth and fluffy mixture. We add the egg yolks to the egg whites, gently folding with a spatula to avoid losing air. We then incorporate the grated lemon zest, which will add a touch of freshness, followed by the flour, mixing gently until everything is homogenous.

We pour the mixture into the trays lined with parchment paper and place them in the preheated oven at medium temperature. We bake the layers for about 20 minutes, or until they turn golden and pass the toothpick test. Once baked, we let them cool slightly, then carefully remove them from the parchment paper and cut each layer into two equal halves.

Next, we take care of the fruit fillings. We start with the strawberries: we wash them well and let them drain, then we put them in a blender and turn them into a puree. We will combine this puree with gelatin hydrated in cold water and melted in a bain-marie, to give it a firm texture. We do the same with the mandarin pulp, obtaining an aromatic and sweet-sour puree.

Now we can start assembling the cake. We take the first half of the layer and place it on a platter. We pour the strawberry puree, cover it with the second half of the layer, and press gently to ensure the filling distributes evenly. We continue with the mandarin puree and the third half of the layer.

To finish the cake, we will prepare a sauce from the kiwi puree, which we bring to a boil and mix with the cake gel powder, thus obtaining a shiny glaze. We pour this sauce over the assembled cake and let everything chill for two hours, so the flavors integrate perfectly.

After the cake has cooled and stabilized, we slice it and decorate it with fresh fruits, such as slices of kiwi, strawberries, or mandarins, to give it a vibrant look. Those who taste it will enjoy every bite, and you will be proud to have made such a refined dessert. Enjoy your meal!

 Ingredients: 2 layers made of: 5 eggs, 5 tablespoons of sugar, 5 tablespoons of flour, 3 tablespoons of oil, grated lemon zest, a pinch of salt. Red filling: puree from 500 g of ripe strawberries + one packet of gelatin (10 g). Yellow filling: puree from the pulp of mandarins (500 g mandarins) + one packet of gelatin. Green filling: puree from 4-5 large ripe kiwis + 2 packets of cake gel.
