We start this delicious recipe by preparing the base mixture. In a large bowl, whisk the whole eggs with the sugar, using a whisk or a mixer on medium speed. Prepare a 25x36 cm tray, which you line with baking paper to prevent sticking. Carefully pour the batter into the tray and level it evenly. Place the tray in the preheated oven at moderate heat and bake for about 20 minutes. Meanwhile, prepare the cream cheese. Mix the cheese with the sugar, eggs, vanilla essence, raisins, and baking powder. It is important to let this mixture sit on the kitchen counter to reach room temperature, which will help in its homogenization.

In parallel, wash the plums and then cut them into quarters. Dust them with vanilla sugar and cinnamon, gently mixing to coat them evenly. After the 20 minutes of baking, remove the tray from the oven and carefully pour the cream cheese over the already baked batter. Place the plums cut-side down, so they caramelize beautifully during baking.
