Chicken skewers with yogurt and spices - a simple and delicious recipe

Ingredients:

- 500 g chicken breast
- 200 g natural yogurt
- 2 eggplants
- 100 g mayonnaise
- 1 bell pepper (preferably red for added color)

- 3 tomatoes
- Olive oil
- Fresh mint leaves
- 1 onion
- 3 cloves of garlic
- Bay leaves
- Salt

Preparation:

1. Marinating the chicken: In a large bowl, combine the yogurt, 2-3 tablespoons of olive oil, dried hot pepper, and tandoori spice mix (if you don't have a tandoori mix, you can use a combination of paprika, cumin, and coriander). Add salt and pepper to taste. Cut the chicken breast into cubes of about 3 cm and add them to the marinade. Mix well, ensuring all pieces of chicken are evenly coated. Let marinate for 15-30 minutes; this step is essential for tender and flavorful chicken.

2. Preparing the vegetables: Meanwhile, prepare the vegetables. Cut the eggplants into cubes similar in size to the chicken and sprinkle a little salt over them to draw out excess water. Let them sit for 10 minutes, then rinse and dry them with a paper towel. Cut the bell pepper and tomatoes into cubes and chop the onion and garlic.

3. Assembling the skewers: Start assembling the skewers by alternating pieces of chicken with cubes of eggplant, bell pepper, tomatoes, and, if desired, a few slices of onion. Use skewers soaked in water beforehand to prevent them from burning on the grill.

4. Cooking the skewers: Preheat the grill or grill pan over medium heat. Brush the skewers with a little olive oil and place them on the grill. Cook for 10-12 minutes, turning occasionally to brown evenly. The chicken is done when it reaches an internal temperature of 75 °C.
