To prepare a delicious stuffed tomato recipe, we start by focusing on the filling, which will add a special flavor to our dish. We make sure to have all the ingredients prepared and at hand to facilitate the cooking process. In a large bowl, we put the cooked rice that we let cool, then add the chicken breast cut into small cubes. It is important that the breast is cooked beforehand to ensure that the filling will be savory and well integrated.

We continue by adding the beaten eggs, which will bind the ingredients and give a fluffier texture to the filling. Next are the roasted peppers, which have been peeled and cut into small pieces. This step is essential to bring extra flavor and color to our dish. We season the filling with salt and pepper to taste, making sure to taste the mixture to ensure it is perfectly balanced.

Once the filling is ready, we move on to preparing the tomatoes. We choose large, ripe tomatoes, which we wash well and carefully cut off the top, forming a lid. Using a spoon or knife, we scoop out the tomato flesh, being careful not to damage the skin. It is important to drain the tomatoes well of excess juice so that the filling does not become watery.

We fill each tomato with the prepared mixture, making sure to fill them well but without overloading them.
