I made these cheese croquettes for the first time out of curiosity after seeing the recipe from Ina. I told myself not to make the full amount, but in the end, I went for the complete recipe because I love cheese anyway. The result was definitely beyond my expectations. 200 g feta cheese
1 egg
4 tablespoons flour (or 3, if you think that's enough; it depends on the cheese and flour)
1/4 teaspoon baking powder
breadcrumbs (enough to roll the croquettes in)

Instructions

1. Place the feta cheese in a bowl and crumble it with a fork.
2. Add the egg, flour, and baking powder. Mix everything well until you get a denser dough that is still easy to shape.
3. Depending on how soft the cheese is or the type of flour, you may need 3 or 4 tablespoons of flour. Add the flour gradually to avoid making the mixture too dry.
4. Prepare a separate mixture of breadcrumbs and dill. You don't need a large amount, just enough to roll the croquettes in.
5. Take a small amount of the mixture with your hand or a spoon and form small balls. Roll them in the breadcrumb-dill mixture until they are completely coated.
6. Heat a pan with enough oil to cover half the thickness of the croquettes. When the oil is hot, add the croquettes for frying.
7. Fry them on both sides over medium heat until they turn golden brown.
8. Remove them to a paper towel to absorb any excess oil.
