Total time: 3 hours and 15 minutes
Number of servings: 4

Squid salad has a special place in everyone's taste journey, a delicate blend of textures and flavors that bring to mind sunny days by the sea. This recipe is one of my favorites because it combines the simplicity of the ingredients with a slow cooking technique that guarantees a delicious result. Using squid or octopus tentacles makes this salad a perfect choice for summer meals or even special occasions.

The ingredients you use are essential to create a tasty salad. Squid is an excellent source of protein, low in calories and rich in nutrients, making it a healthy choice. Plus, olive oil provides healthy fatty acids and the vegetables add vitamins and minerals.

Ingredients:
- 1 lb squid or octopus tentacles
- 3 cloves garlic
- 3 bay leaves
- 1 red pepper
- A handful of pickled vegetables (cucumber, carrot, cauliflower)
- 1 bunch fresh parsley
- 100 ml olive oil
- 50 ml vinegar (preferably a weaker vinegar)
- Salt and pepper to taste

Step by Step

1. Preparing the squid: Start by washing the squid tentacles thoroughly. This is a crucial step as proper cleaning will ensure that your salad tastes fresh and clean.

2. Cooking in the Slow Cooker: Place the tentacles in a crock pot. Add coarsely chopped onion, the 3 cloves of garlic, bay leaves, a little salt and pepper, and 3-4 tablespoons of olive oil. This mixture will create a flavorful sauce that will penetrate the meat, making it extremely tasty. Set the program on high for 3 hours.

3. Preparing the Vegetables: 1 hour before the tentacles are ready, prepare the vegetables. Finely chop the remaining onion, red bell pepper, and pickled vegetables. Add them to a bowl and season with a little salt, pepper, olive oil and vinegar. It's important not to overdo the vinegar as the salad will have time to rest in the fridge and the flavors will intensify.

4. Assembling the Salad: Once the tentacles are cooked, remove them from the crock pot and let them cool on a plate. Then cut them into suitable chunks. Toss them with the previously prepared vegetables, making sure each ingredient is well distributed.

5. Salad Dressing: Cover the salad with plastic wrap and let it sit in the refrigerator for at least an hour. This step is essential as it allows the flavors to intertwine, creating a salad with a rich and complex taste.

6. Serve: Once the salad has been in the fridge, it's ready to serve. You can present it on a large platter, garnished with chopped fresh parsley. It's a great choice as an appetizer or a light main course, perfect with crusty bread and a glass of white wine.

Practical tips
- If you want an even more intense taste, add a few drops of fresh lemon before serving the salad.
- Experiment with different types of vegetables in vinegar - each adds a distinct touch.
- Always check the freshness of the squid, choosing those that have a uniform color and firm texture.

Possible Variations
- You can add green or black olives for a more pronounced Mediterranean flavor.
