- 100 g melted butter

- 400 g cream cheese (at room temperature)
- 300 g condensed milk
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon vanilla extract
- 200 g pitted cherries (fresh or frozen)
For decoration:
- A few whole cherries for decoration
- Fresh mint leaves (optional)
Step by step to achieve a perfect tart:
1. Preparing the crust: In a large bowl, crush the biscuits until you get a fine powder. You can use a blender or put the biscuits in a bag and crush them with a rolling pin. Add the melted butter and mix well until the mixture is homogeneous. Press the mixture into the base of a 24 cm tart pan, pressing well to form an even crust. Place the pan in the refrigerator for about 15 minutes to firm up.
2. Preparing the filling: In a large bowl, use a mixer to beat the cream cheese until creamy and lump-free. Gradually add the condensed milk, continuing to mix until smooth. It is important that the cheese is at room temperature to avoid lumps. Incorporate the lemon juice and vanilla extract, mixing well.
3. Assembling the tart: Remove the crust from the refrigerator and pour the cheese filling over it, leveling with a spatula to achieve an even surface. Then, add the pitted cherries, sprinkling them evenly over the filling. You can gently bury the cherries in the filling for better integration.
4. Baking: Preheat the oven to 180°C (350°F) and bake the tart for 30 minutes, or until the filling is firm to the touch. The tart will be slightly golden at the edges. Let it cool completely at room temperature, then transfer it to the refrigerator for at least 2 hours before serving.
5. Serving: Once the tart is well chilled, you can decorate it with a few whole cherries and fresh mint leaves for an elegant look. Serve the tart with chocolate sauce or a dollop of whipped cream if you desire an extra flavor boost.
