Chicken with Sour Cream
The washed and cut chicken is boiled in a pot with cold water, adding a pinch of salt to enhance the flavor. It is important to ensure that the water covers the meat well so that it cooks evenly. During boiling, we will notice a foam forming on top, which must be removed with a skimmer to achieve a clear and clean broth. This step is crucial for improving the final appearance of the dish. After about 20 minutes of boiling, we take the meat out of the pot and let it drain well to remove excess water.
In a large frying pan, we add a little oil and heat it over medium heat. When the oil is hot, we place the chicken pieces and fry them, turning them on all sides until they are nicely browned, achieving an appetizing crust. This process will not only add a special flavor but will also provide a crispy texture.
Meanwhile, we take care of the onion. We peel it, chop it finely, and add it to a separate pan, where more oil has been heated. We sauté the onion over low heat, stirring occasionally, until it becomes glassy and starts to soften. This step is essential because the sautéed onion will add sweetness to the dish. Once the onion has softened, we sprinkle flour and mix well, allowing everything to cook for a minute or two to eliminate the raw flour taste.
Immediately after, we add sour cream, stirring continuously to obtain a creamy sauce. We let it boil a few times, and then we dilute the mixture with the broth in which the chicken was boiled, so that the sauce achieves a uniform and pleasant consistency. Once the mixture has started to boil again, we add the fried meat pieces and let everything simmer for about 10 minutes to combine the flavors.
If the sauce is too thick, we can gradually add more broth, adjusting the consistency to our preferences. We season with salt and pepper to taste, keeping in mind that the broth used may already contain salt. In the end, we sprinkle finely chopped parsley to add a fresh and colorful touch to the dish.
