Preparing the Rustic Potato Bread
1. Preparing the potatoes
Start by peeling the three large potatoes, then cut them into cubes. Boil them in a pot with warm water and a pinch of salt. Cook until soft, about 15-20 minutes. In the meantime, you can enjoy the aroma that will spread in the kitchen.
2. Making the mash
After the potatoes are boiled, drain them, but do not throw away the water! Reserve a cup of the water in which the potatoes were boiled. Mash the boiled potatoes with 4 tablespoons of butter to achieve a creamy and delicious mash. The butter will add a rich flavor, and the mash will make the bread fluffier.
3. Activating the yeast
Warm the warm milk together with the two teaspoons of sugar. Once heated, pour it into a cup and add the yeast. Let it activate for 5-10 minutes until a foam forms on the surface. This step is essential for fluffy bread, so don't skip it!
4. Preparing the dough
In a bowl, place the potato mash and add the flour and salt. Mix gently, then pour in the milk with the activated yeast. Start mixing, gradually adding the water in which the potatoes were boiled, until the dough becomes smooth. You do not need to use all the water; add as much as needed to achieve an elastic and smooth dough.
5. Kneading
This is the fun part! Knead the dough for about 10 minutes until it becomes elastic and no longer sticks to your hands. If the dough becomes too sticky, add a little more flour.
6. Rising the dough
Place the dough in a clean bowl, cover it with a towel, and let it rise in a warm place, away from drafts, for about 1 hour or until it doubles in volume. This is a crucial step as the yeast will do its magic.
7. Shaping the bread
After the dough has risen, remove it from the bowl and shape it into a ball. Place it on a baking tray lined with baking paper. Cover it again with a towel and let it rise for another 10-15 minutes. This will help the bread become even fluffier.
8. Baking the bread
Preheat the oven to 180°C (medium heat). Place a pot of water under the tray where you will bake the bread; this trick will help you achieve a perfect crust without burning the bottom. Bake the bread for 30-40 minutes. Check if it is baked by inserting a toothpick in the center; if it comes out clean, the bread is ready!
9. Cooling
Remove the bread from the oven and transfer it to a wooden board to cool. It is important not to leave it on the tray to avoid moisture.
10. Serving
The rustic potato bread can be enjoyed warm, spread with butter, or alongside a warm soup, a fresh salad, or a cheese platter. It is just as delicious cold when used for sandwiches.
Nutritional benefits
This bread is an excellent source of complex carbohydrates from flour and potatoes, providing long-lasting energy. The butter adds healthy fats, and the yeast contributes to digestive health. It is perfect to include in a balanced diet, especially on cool autumn and winter days.
