Sour cherry jam
To make a delicious fruit jam, the first essential step is to ensure that the fruits are fresh and of good quality. Choose seasonal fruits such as strawberries, raspberries, plums, or peaches, each having its unique flavor. Wash them carefully under a stream of cold water, removing any impurities or residues. After they have been cleaned, remove the pits and stems, so you only get the pulp of the fruit, which will give sweetness and flavor to the preparation.
In a large pot, add the chopped fruits and sprinkle sugar on top. The amount of sugar can vary depending on your preferences, but a standard ratio is about 700 grams of sugar to one kilogram of fruit. This will help extract the natural juices from the fruits and contribute to thickening the mixture. Gently mix the ingredients, letting them sit for 30 minutes. This step will allow the sugar to dissolve and form a delicious syrup.
Once the sugar has started to melt, place the pot on low heat, being careful to stir occasionally to prevent sticking. Cook the mixture on low heat, allowing it to simmer slowly. The process can take between 30 to 60 minutes, depending on the type of fruits used and the desired consistency. You will notice how the mixture gradually thickens, and the sweet aroma of the fruits will blend with that of the sugar, filling the entire kitchen with an irresistible scent.
When the jam has reached the desired consistency, you can start transferring it into sterilized jars. Make sure the jars are completely clean and dry to prevent contamination of the mixture. Fill the jars almost to the top, leaving a little space for expansion. After you have sealed the lids tightly, turn the jars upside down for about 5 minutes. This method will help create a vacuum, thus keeping the jam fresh and flavorful for a longer period.
Once they have cooled, store the jars in a dark and cool place. Enjoy the jam on toast, with cheese, or as a filling for cakes and tarts, and savor the taste of summer all year round!
