In the first stage, we prepare to make a flavorful marinade for the meat, an essential step to achieve a delicious and flavorful dish. It is recommended to let the meat marinate for at least an hour, but ideally, we should be patient and let it sit overnight, allowing the flavors to penetrate deeply. In a generous bowl, we squeeze the fresh juice of a lemon, which will add a note of acidity and freshness. Over the lemon juice, we pour 150 ml of dry white wine, which will contribute to the complexity of the taste. We season the mixture with salt and pepper to taste, then add a few crushed garlic cloves that will provide an inviting aroma, and a tablespoon of freshly chopped parsley, along with a few bay leaves. We mix everything carefully, ensuring that the flavors blend perfectly, and then we place the slices of meat in this marinade, making sure they are not too thick or too thin. We cover the dish with a lid or plastic wrap and put it in the fridge for at least an hour, allowing the meat to absorb all the flavors.

After the marinating time has expired, we move on to the next stage: preparing the meat. In a pan heated over medium heat, we add the two tablespoons of oil and let it heat well. We take the pieces of meat out of the marinade, letting them drain a bit, then we fry them on both sides until they acquire a nicely browned color, promising a savory taste. Once fried, we remove the pieces of meat onto a plate and focus on the vegetables. In the same pan, using the flavored oil, we add sliced onions and let them sauté until they become transparent and slightly caramelized.

Once the onions have taken on a pleasant color, we place the fried pieces of meat back into the pan and add the quartered plums. These will add a sweet-sour contrast that will enrich the dish. Over all this, we pour the juice from the marinade in which the meat was, ensuring that we cover the ingredients well. We cover the pan with a lid and let it simmer on low heat, giving the meat time to soften and absorb the flavors from the sauce. If we notice that the sauce reduces too much, we can add a little wine or water to ensure that the meat cooks evenly and remains juicy.

After the meat is cooked and the sauce has thickened, we will have a special dish with a deep and complex taste, perfect to be served alongside seasonal sides or simply with a slice of fresh bread. This recipe not only brings together simple ingredients but also creates a culinary experience that will delight any meal.
