Nut and Chocolate Cake for a Special Celebration

This weekend, I decided to prepare a special cake, not just for myself, but for my uncle, Mihai, who is celebrating his name day. Happy birthday, Mihai! May you have health, happiness, and lots of love! Although the cake is for him, I can't wait to taste this delicacy, as I have already had the chance to enjoy the delicious sponge and cream. This recipe originates from the creations of Chef Maniac, to whom I sincerely thank for the inspiration.

Necessary ingredients

*For the sponge:*
- 8 eggs
- 8 tablespoons of sugar
- 8 tablespoons of flour
- 1 teaspoon of baking powder
- Grated zest of 1 orange

*For the cream:*
- 500 ml milk
- 2 and 1/2 tablespoons of cornstarch
- 2 tablespoons of cocoa
- 3 tablespoons of sugar
- 150 g butter (at room temperature)
- 2 tablespoons of powdered sugar
- 2 tablespoons of rum essence
- 1/2 cup of ground walnuts

*For the glaze:*
- 100 g milk chocolate
- 50 g dark chocolate
- 100 ml liquid cream

*For the syrup:*
- 1/2 cup water
- 1 tablespoon vanilla essence
- 3 tablespoons of sugar
- 1 packet of vanilla sugar

*For decoration:*
- 100 ml liquid cream
- 1 packet of instant coffee
- About 1 cup of ground walnuts

Step-by-step preparation of the cake

1. Preparing the cream: Start by mixing in a bowl the cornstarch, cocoa, sugar, and a few tablespoons of milk. Use a whisk to achieve a smooth mixture. In a separate pot, bring the rest of the milk to a boil. When it starts to boil, add the cocoa mixture and stir constantly over low heat until the cream thickens, being careful not to form lumps. Once done, remove from heat and cover with plastic wrap to prevent a crust from forming. Let it cool.

2. Preparing the sponge: Separate the eggs, and beat the egg whites with a pinch of salt and sugar until they form a stiff foam. Gradually add the yolks, mixing continuously. Incorporate the grated orange zest and baking powder, then add the flour gradually, mixing gently to avoid losing air from the mixture. Grease a detachable cake pan with butter and line it with parchment paper. Pour the mixture into the pan and bake in a preheated oven at 180°C for 25-30 minutes. Test the sponge with a toothpick; if it comes out clean, the cake is ready. Let it cool completely before cutting it in half.

3. Preparing the syrup: In a pot, mix the water with the sugar and vanilla sugar, then put it on the heat. Let it boil for a few minutes, then let it cool. After it has cooled, add the vanilla essence.

4. Assembling the cake: Place the first layer of sponge on a platter and generously soak it with the prepared syrup. Use a detachable ring to form the cake. Add all the cocoa cream and level it evenly. Add the second layer of sponge, soak it, and gently press down.

5. Preparing the glaze: Break the chocolate into pieces and place it in a thicker bowl. Add the liquid cream and heat over low heat, stirring constantly until the chocolate melts completely. Remove the bowl from heat and let the glaze cool for 5 minutes. Pour the glaze evenly over the cake, allowing it to drip slightly over the edges. You can create an artistic effect with the back of a spoon, making a few drops.

6. Finalizing the cake: Let the cake chill in the refrigerator for a few hours for the glaze to set. Before serving, whip the liquid cream and add the instant coffee, then spread the whipped cream around the edges of the cake. Coat the cake in ground walnuts, giving it a crunchy and savory texture. If desired, you can use a piping bag to add whipped cream decorations on top.

Serving suggestions and combinations:
The cake is delicious on its own, but pairs perfectly with a cup of aromatic coffee or a fruit tea. You can serve it with vanilla ice cream for a wonderful contrast of textures. Additionally, a fresh fruit salad can add a note of freshness.

Useful tips:
- Make sure all ingredients are at room temperature before starting the cake preparation; this will help achieve better homogeneity of the mixtures.
- If you prefer a firmer cream, you can add a little hydrated gelatin, but normally, the cream should be thick enough without it.
- The cake can be prepared a day in advance, and the flavors will intensify overnight, making it even more delicious.
