Rice pudding
Rice pudding – a classic, simple, and delicious dessert that reminds us of childhood. This rice pudding recipe is easy to prepare and can turn into a surprising delight with a few additional ingredients. I will show you step by step how to achieve a creamy and flavorful rice pudding, perfect for any time of the day.
Preparation time: 10 minutes
Cooking time: 30 minutes
Total time: 40 minutes
Number of servings: 4
Ingredients:
- 200 g rice (preferably risotto rice or short-grain rice)
- 1 liter milk (for a richer version, you can use whole milk or coconut milk)
- 100 g sugar (you can adjust the amount according to your preference)
- 1 vanilla bean or 1 teaspoon vanilla extract
- A pinch of salt
- Cinnamon (optional, for decoration and flavor)
- Lemon zest (optional, for an extra touch of freshness)
Instructions:
1. Start by rinsing the rice under cold water until the water runs clear. This step is essential as it removes excess starch and prevents the rice from becoming too sticky.
2. In a medium saucepan, add the rinsed rice, milk, sugar, a pinch of salt, and the split vanilla bean (or vanilla extract, if using). Stir gently to combine the ingredients.
3. Place the saucepan over medium heat and bring the mixture to a boil. Once it starts boiling, reduce the heat to low and let the rice simmer gently. Stir occasionally to prevent sticking.
4. Cook the rice for about 25-30 minutes, until it becomes soft and creamy. If you prefer a creamier rice pudding, you can gradually add more milk during cooking until you achieve the desired consistency.
5. Once the rice is done, remove the vanilla bean (if used) and let the dessert cool slightly.
6. Serve the rice pudding in bowls, sprinkled with cinnamon and, if desired, with lemon zest for a touch of freshness. You can also add fresh fruits like strawberries, blueberries, or peaches for a delicious contrast.
Practical tips:
- For a more intense flavor, you can add a tablespoon of almond or coconut extract if you want to change the flavor profile a bit.
- If you are looking for a quick dessert recipe, you can use quick-cooking rice, which will reduce the preparation time.
- A delicious variation is to add some crushed nuts or toasted coconut flakes on top, providing an extra texture.
Rice pudding is a versatile dessert that can be customized according to your preferences. This simple recipe allows you to enjoy a classic delicacy, perfect both warm and cold. Whether you choose to serve it for breakfast or as a dessert after dinner, rice pudding will always be a winning choice in the kitchen. Enjoy every spoonful!
I washed the rice well and put it to boil together with a cup of water. I boiled it until all the water evaporated, stirring continuously to prevent the rice from sticking to the pot. Then I added the milk mixed with salt, vanilla essence, and sugar, and let it boil while stirring constantly for about 15-20 minutes. You can add the raisins either to the rice while it is still on the heat or to the dish in which you serve the rice.
