In a large bowl, we add the room temperature margarine, which will be easy to cream. Using a spatula or a mixer, we cream the margarine together with the sugar until we get a creamy and fluffy mixture. It is important that the sugar dissolves well to achieve a uniform texture.
After obtaining a homogeneous cream, we add the grated lemon zest. This will bring a fresh fragrance and a note of acidity that will balance the sweetness. We mix well so that the lemon flavor integrates into the mixture. We continue by gradually adding the other ingredients, being careful to incorporate them well. It is essential that each ingredient is evenly distributed in the mixture to ensure even baking.
After we finish mixing, we let the mixture rest in the refrigerator for at least 30 minutes, preferably 45 minutes. This process will allow the ingredients to blend better and will help firm up the margarine, making it easier to form the cookies. During this time, the lemon aroma will become even more intense, and the dough will achieve a perfect consistency.
When it is time to get to work, we take the dough out of the refrigerator. We will not grease the tray or use parchment paper, as we want to maintain the natural texture of the cookies. We take portions of dough and place them directly on the tray, being careful to leave enough space between them to allow for expansion during baking.
After we finish shaping the cookies, we place them in the preheated oven at the right temperature and let them bake until they become golden and crispy around the edges. The enticing smell that will fill the kitchen is a sign that the delicious cookies are almost ready. After we take them out of the oven, we let the cookies cool slightly in the tray before transferring them to a cooling rack. Then, we can enjoy these delicate cookies, with a lemon flavor that will delight our taste buds!
