- 500 g flour
- 25 g fresh yeast
- 1 teaspoon salt
- 300 ml warm water

- 3 green onions
- A small piece of bacon (for greasing)
Step 1: Preparing the dough
Start by dissolving the yeast in warm water, adding a pinch of salt. Let the mixture sit for about 10 minutes until it starts to foam. This is essential for activating the yeast and getting a fluffy dough. In a large bowl, add the sifted flour and make a small well in the middle. Pour in the yeast water mixture and start incorporating the flour. Knead the dough for 10 minutes until it becomes elastic and smooth. In the meantime, take care of the filling. If using fresh spinach, wash it well and boil it for 2-3 minutes in salted water, then drain and chop finely. If using frozen spinach, thawing and draining the excess water is sufficient. In a pan, add the chopped green onions and sauté them in a little oil or butter until soft and translucent. Then, add the spinach and mix well. In a separate bowl, combine the cheese with the 3 beaten eggs, add the spinach and onion mixture, mixing everything well to achieve a uniform composition.
Step 3: Assembling the cocorada
Once the dough has risen, roll it out on a floured work surface until you get a thin sheet. Cut the dough into squares or circles, depending on your preference. Place a tablespoon of the cheese and spinach filling in the center of each dough portion. Fold the dough to cover the filling and seal the edges well so that the filling does not leak during baking. Arrange the cocoradas on a baking tray lined with parchment paper.
Step 4: Baking
Before placing the cocoradas in the oven, brush them with melted bacon for a golden and delicious crust. Preheat the oven to 180°C and bake the cocoradas for 25-30 minutes, or until golden and fluffy.
