Ingredients:
- 1.5 kg fresh cherries (choose well-ripened cherries without signs of mold or damage)
- 1.5 kg granulated sugar (cane sugar is ideal for achieving a fine texture)
- 750 ml alcohol (you can use alcohol of 40-50% or good quality vodka for a smoother taste)
Step 1: Preparing the cherries
Start by washing the cherries under a stream of cold water. Make sure to remove the leaves and stems. Using a small knife, remove the pits. This step is essential, as the pits can give a bitter taste to the liqueur.
Step 2: Boiling the cherries
In a large pot, add the cleaned cherries and sugar. Mix well to combine the ingredients. Place the pot over medium heat and let it boil for 15-20 minutes, stirring occasionally. You will notice that the cherries will start to release their juice, and the mixture will transform into a delicious syrup.
Step 3: Straining the mixture
After the cherries have boiled, take a fine sieve or cheesecloth and strain the mixture into another clean container. This process will separate the juice from the cherry pulp. Make sure to squeeze the cheesecloth well to extract as much syrup as possible.
Step 4: Adding the alcohol
Once you have obtained the syrup, let it cool completely. Once cooled, gradually add the alcohol, stirring gently. It is important to use room temperature alcohol to avoid any unpleasant chemical reactions.
Step 5: Bottling
Pour the cherry liqueur into clean, dry bottles, preferably dark glass to prevent oxidation. Seal them well with caps and label them with the preparation date.
Step 6: Infusing
Store the bottles in a cool, dark place. The cherry liqueur will become increasingly aromatic as the days go by. Wait at least a week before consuming, but for an intense flavor, you can let it infuse for up to 3 months.
Serving and variations
When you are ready to enjoy the cherry liqueur, you can serve it neat, on ice, or use it in creative cocktails. Add it to soda drinks or combine it with prosecco for a refined aperitif.
