Fruit Cake
To prepare a delicious and fluffy cake, we start by gathering all the necessary ingredients and ensuring that we have a well-organized workspace. First, you will need three fresh eggs, five tablespoons of granulated sugar, one cup of flour, one teaspoon of baking powder, a few drops of vinegar, one cup of milk, 100 ml of oil, and of course, your favorite fruits such as apples, pears, or berries.
In a pot or a large bowl, start by mixing the yolks of the three eggs with the five tablespoons of sugar, using a whisk or mixer until the mixture becomes creamy and a deep yellow. This step is essential as the sugar will dissolve better and contribute to a fine texture of the cake.
Once you have a homogeneous mixture, gradually add the flour, which you previously mixed with the baking powder. It is important to activate the baking powder with a few drops of vinegar, as this will help create a fluffy texture for the cake. Alternate adding the flour with the milk, mixing continuously to avoid lumps. Once you have a uniform composition, it's time to add the oil, which will enrich the flavor of the cake and contribute to its moisture.
Separately, beat the egg whites with the three tablespoons of sugar until you achieve a firm, glossy foam. This will add air and volume to the cake, making it even fluffier. Slowly fold the beaten egg whites into the yolk mixture, being careful not to deflate the foam. Use a spatula and mix gently, from top to bottom.
Once you have a homogeneous composition, prepare a baking tray by greasing it with butter and dusting it with flour to prevent the cake from sticking. Pour the mixture into the tray, leveling the surface evenly. Then, add the washed and peeled fruits, either sliced or whole, depending on your preference. As the cake bakes, the fruits will release their juice and aroma, enriching the final taste.
Bake the cake at a moderate temperature, around 180 degrees Celsius, for about 45 minutes or until it becomes golden and a toothpick inserted in the middle comes out clean. After removing the cake from the oven, let it cool in the tray for a few minutes, then transfer it to a wire rack to cool completely.
