Chicken burgers

Meat: Chicken burgers | Discover Simple, Tasty and Easy Family Recipes | YUM

Every time I make chicken burgers at home, I start with raw chicken breast, not store-bought ground meat. I usually use a blender or a meat grinder to ensure a juicier mixture. I don't spend much time on the ingredients, and the rest just takes a few simple moves. I like being able to control exactly what goes into the burgers and letting them chill a bit in the fridge before cooking – they turn out firmer and don’t stick to the grill.

Quick Info

Total time: about 1 hour (including chilling in the fridge)
Preparation time: 20 minutes
Cooking time: 10 minutes (5 minutes on each side)
Servings: 6 burgers
Difficulty: easy
Recipe type: homemade burgers for lunch or dinner

Ingredients

6 burger buns
500 g chicken breast
1 onion
3 garlic cloves
fresh parsley (to taste)
salt and pepper
mayonnaise (for assembling)
1-2 cucumbers, fresh or pickled
(optional) finely chopped raw cabbage
(optional) slices of tomato

Preparation method

1. Cut the chicken breast into pieces and grind it in a meat grinder or place it in a blender. Don’t overdo it; you want a texture fine enough to form the burgers, but not like paste.
2. Peel the onion and garlic. Grate them on a fine grater. Squeeze the onion lightly if it releases too much water.
3. Chop the parsley as finely as possible.
4. Place the ground meat in a large bowl. Add the onion, garlic, parsley, salt, and pepper. Mix with your hands until well combined.
5. Divide the mixture into six equal parts. Shape them into discs slightly larger than the buns (they shrink when cooked). Place them on parchment paper and refrigerate for 30 minutes. They firm up and hold their shape better.
6. Preheat the grill or pan. Lightly grease with a bit of oil to prevent the burgers from sticking. Place the cold patties directly on the grill, do not let them warm to room temperature.
7. Cook for 5 minutes on each side without moving them too much. When browned, remove from heat.
8. Split the buns and prepare to assemble. Spread with mayonnaise, place thin slices of cucumber (fresh or pickled), then the chicken burger. You can also add raw cabbage or tomatoes for more freshness.
9. Serve immediately while they are warm.

Why I make this recipe often

I’ve made this recipe many times because it’s quick and doesn’t involve complicated techniques. The ingredients are always on hand, and there’s no need for additives or flavor enhancers. The texture of the burger is different from store-bought ground meat – more tender and juicy. I can choose what to assemble them with, so I don’t get bored of them.

Tips and variations

Tips

Don’t skip the chilling in the fridge – it helps a lot in maintaining the shape, especially when using chicken meat.
If you prefer a denser texture, you can press the mixture a bit when shaping the burgers.
Cook on medium heat, not high, to avoid burning the outside while leaving the inside raw.

Substitutions

White onion can be replaced with red onion if you prefer a sweeter flavor.
Pickles can be used instead of fresh cucumbers or vice versa, depending on preference.
Mayonnaise can be replaced with a simple yogurt sauce if you want a lighter option.

Variations

You can add thin slices of raw cabbage for extra texture.
Sliced tomatoes work well for an added freshness.
If you want to diversify, try adding a few lettuce leaves or a slice of light cheese.

Serving suggestions

I usually serve them straight from the pan, with the bun slightly warmed.
They are great with fresh salad on the side, not just in the bun.
You can add fries or a vegetable side, depending on preference.

Frequently asked questions

1. Can I use store-bought ground chicken?
Yes, but the texture will be different. If you have time, it’s worth grinding the meat at home.

2. Do chicken burgers stick to the pan?
If the pan is well heated and lightly greased, they won’t stick. Chilling the mixture helps a lot with this.

3. Can I prepare chicken burgers in advance?
You can shape the patties and keep them in the fridge for a few hours or overnight, covered with plastic wrap. Cook them fresh when needed.

4. What kind of buns are suitable for these burgers?
Fluffy buns without seeds absorb the juices from the meat and sauce well. But you can use whatever you have on hand.

5. Can I freeze raw chicken burgers?
I don’t recommend it for this recipe, as the texture changes upon thawing. It’s best to cook them fresh.

Nutritional values

Estimation per burger (without extra sauce or sides):
Calories: 230-260 kcal
Protein: approximately 20-23 g
Fat: 7-9 g (varies depending on the mayonnaise used)
Carbohydrates: 25-30 g (from the bun)
Sodium and other values may vary, depending on the amount of salt, mayonnaise, and type of bun. These are just estimates for a general idea.

Storage and reheating

Cooked burgers can be stored in the fridge, covered, for up to 2 days. You can reheat them briefly in a hot pan, but the texture won’t be as juicy as fresh. I don’t recommend keeping them too long or freezing them after cooking. They are best consumed immediately, but can be prepared in advance and kept cold if needed.
