Milk is the basic ingredient for many delicious dishes, and the kulfi recipe we propose today is a true treasure of Indian cuisine. This creamy, flavorful, and refreshing ice cream will bring a touch of magic to hot summer days. We start by preparing the milk, which we will bring to a boil in a double-walled pot. This choice is essential because it helps distribute heat evenly, preventing the milk from sticking to the bottom of the pot.

So, over low heat, we let the milk come close to boiling point. It is important to be careful and not let it boil over, as we want to achieve a creamy and rich consistency. Once the milk reaches that ideal temperature, we lower the flame and add a cinnamon stick, which will infuse the milk with a warm and comforting aroma.

We continue to simmer the milk over low heat, stirring constantly with a wooden spoon. This step may seem simple, but it is essential to prevent a crust from forming. Over about an hour, you will notice how the amount of milk gradually decreases, transforming into a dense and flavorful cream. If you notice a crust forming, don’t panic! Stir with the wooden spoon and continue patiently.

Once the milk has reduced to half its original volume, we add the sugar, stirring carefully to ensure it dissolves completely. We let the mixture boil for another 2-3 minutes, after which we turn off the heat. Now, it’s time to let the mixture cool. We remove the cinnamon stick and prepare to pour the cream into kulfi molds or special popsicle molds.

After filling the molds, we place them in the freezer, letting them sit overnight. This wait can be hard to bear, but it will definitely be worth it. About 15 minutes before serving, we take the kulfis out of the fridge. If using molds, it is recommended to hold them in warm water for a few seconds to make it easier to remove. Enjoy this delicacy with a smile on your face, allowing yourself to be carried away by its unique flavors and velvety texture. Kulfi is not just a dessert, but an unforgettable culinary experience!
