To prepare a delicious cake, we start by beating the egg yolks well with 80 g of sugar, mixing vigorously until the mixture becomes frothy and slightly light in color. This process is essential, as the incorporated air will help the cake to be fluffy and have a pleasant texture. Once we have achieved a froth, we add the cocoa powder, a pinch of salt, and gradually start pouring in the 8 tablespoons of milk, mixing continuously. This will add moisture and intensify the chocolate flavor.

After all the wet ingredients are well incorporated, we add the baking powder mixed with the flour, sifting it to avoid lumps. It is important to mix gently, from top to bottom, so as not to remove the air from the mixture. In another bowl, we beat the egg whites with the remaining sugar until they become a firm meringue-like foam. This step will add volume to the cake. Once the egg whites are beaten, we gradually add them to the egg yolk mixture, mixing carefully.

Once the mixture is ready, we pour it into a greased and floured baking pan and bake it at medium heat. It is important to do the toothpick test; the cake is done when the toothpick comes out clean. While the base is baking, we take care of the second layer. We continue to beat the egg whites with the sugar, and when the foam becomes firm, we add the ground walnuts. This layer will be baked at low heat, and to dry it evenly, I prefer to leave the oven door open, patiently waiting until it cooks properly.

For the cream that will complete the cake, we mix all the ingredients except for the butter, and we steam them, stirring constantly until the mixture thickens. Meanwhile, in another bowl, we beat the butter until it becomes fluffy, then incorporate it into the cooled cream. We may encounter difficulties in thickening the cream, but we do not get discouraged. If the cream does not thicken, we can add two tablespoons of cornstarch dissolved in a little milk to help achieve the desired consistency.

When all the components are ready, we move on to assembling the cake. We cut layer 1 in half and place the first layer on a platter, adding a generous layer of jam, followed by half of the cream. Then, we place layer 2, add the other half of the cream, and finally cover it with the other half of layer 1. The final result is a cake with rich layers of chocolate, walnuts, and delicious cream, perfect to be enjoyed with loved ones.
