Baking time: 25 minutes
Number of servings: 12

Ingredients

*For the base:*
- 6 fresh eggs, at room temperature
- 6 tablespoons granulated sugar
- 1 packet of chocolate-flavored Crem Ole

*For cream 1:*
- 250 ml liquid cream
- 200 ml milk
- 1 packet of vanilla-flavored Crem Ole

*For cream 2:*
- 250 ml liquid cream
- 200 ml milk
- 1 packet of chocolate-flavored Crem Ole

*For the glaze:*
- 100 g dark chocolate (70% cocoa is ideal)
- 100 ml liquid cream
- 50 g butter
- 50 g brandy (optional)

Step by step for a perfect cake

1. Preparing the base:
Start by separating the egg whites from the yolks. This will ensure a fluffy and airy texture for your base. Use a clean bowl for the egg whites, making sure there is no trace of yolk. Beat the egg whites with a mixer on high speed until you get a firm foam. Gradually add the sugar, continuing to mix until the mixture becomes glossy and is perfect for forming stiff peaks.

2. Incorporating the yolks and Crem Ole:
Add the yolks one at a time, mixing well after each addition. Now is the time to add the packet of chocolate-flavored Crem Ole. Mix with a spatula, being careful not to deflate the air in the mixture.

3. Baking the base:
Line a cake pan with parchment paper and carefully pour the batter into it. Preheat the oven to 160°C (low heat) and bake the base for 25 minutes, or until it passes the toothpick test. A toothpick inserted into the center of the base should come out clean. Allow the base to cool completely in the pan.

4. Preparing the first creams:
- *Cream 1:* In a bowl, combine the milk, liquid cream, and the packet of vanilla-flavored Crem Ole. Mix on medium speed until the cream becomes firm and airy.
- After the base has cooled, remove it from the pan and line the sides of the pan with plastic wrap. Place the base back in and evenly spread the vanilla cream over the surface. Refrigerate for 30 minutes.

5. Preparing the second cream:
Repeat the process for cream 2, using the milk, liquid cream, and the packet of chocolate-flavored Crem Ole. Once the cream is ready, take the cake out of the refrigerator and add the chocolate cream on top. Return the cake to the refrigerator for a few hours, ideally overnight, to firm up well.

6. Making the glaze:
In a small saucepan, heat the cream over low heat. Gradually add the broken chocolate pieces, butter, and brandy. Stir constantly until the chocolate and butter completely melt and the mixture becomes homogeneous. Allow the glaze to cool to room temperature.

7. Finishing the cake:
Remove the cake from the pan and pour the glaze over the top, spreading it evenly. Leave it in the refrigerator to firm up the glaze. Now is the perfect time to play with decoration! You can add grated chocolate, fresh fruits, or even a dollop of whipped cream.
