Step by Step
1. Preparing the Base
The first step in creating this delicious cake is to prepare the base. Start by separating the egg whites from the yolks. Whip the egg whites until frothy, then gradually add the sugar, mixing continuously until you achieve a firm meringue. This process is essential for giving the base a fluffy texture.
Carefully add the water, drop by drop, and gently mix. Then add the yolks beaten with the oil. Use a spatula or wooden spoon to incorporate the ingredients, being careful not to deflate the meringue.
Sift together the flour and cocoa and fold them into the egg mixture. Mix gently, from top to bottom, to maintain the air in the egg whites.
Practical tips: Ensure all ingredients are at room temperature for an even mixture. Also, do not open the oven during baking to avoid deflating the base.
2. Baking
Prepare a baking tray (preferably 25x35 cm) by greasing it with oil and dusting it with flour. Place parchment paper at the bottom of the tray to prevent sticking. Pour the base mixture into the tray and level the surface.
Preheat the oven to 180 degrees Celsius. Bake the base for 30 minutes, then I recommend increasing the temperature to 190 degrees Celsius for the last 5 minutes. Once the base is golden and a toothpick comes out clean, remove it from the oven and let it cool in the tray.
3. Preparing the Syrup
While the base cools, prepare the syrup. In a saucepan, combine the water, sugar, and chocolate cappuccino packet. Boil over medium heat, stirring occasionally, until the sugar completely dissolves. Then let it cool.
4. Preparing the Cream
To prepare the cream, beat the butter (at room temperature) with a mixer until fluffy. Add the powdered sugar and continue mixing until completely dissolved. Add the egg yolks and cocoa, mixing for another minute until you achieve a smooth and homogeneous cream.
5. Assembling the Cake
Cut the cooled base into two equal parts. Carefully soak the first half of the base with the cooled syrup, being careful not to oversaturate it. Spread the cream evenly over this half of the base, then place the other half on top. It is important that the unsaturated side is on the outside to maintain the perfect icing.
6. Preparing the Icing
For the icing, combine the water, sugar, and cocoa in a saucepan. Boil over medium heat for about 1 minute, stirring constantly. Once the mixture melts, remove the saucepan from the heat and add the butter. Mix well until the butter completely dissolves. Allow the icing to cool slightly before pouring it over the cake.
Serving suggestion: Once the icing has set, decorate the edge of the cake with whipped cream and add a few rosettes on top. If you want to add extra flavor, you can add some pieces of cappuccino chocolate, just like I do!

Frequently Asked Questions
1. Can I use free-range eggs?
Yes, free-range eggs can add a more intense flavor to your cake.
2. How can I keep the cake fresher?
I recommend storing it in the fridge, covered with plastic wrap or in an airtight container. This way, it will stay fresh for several days.
3. Can I replace butter with margarine?
Although you can use margarine, the texture and taste will be different. Butter adds a special creaminess to the cake's cream.
