Cheese and Strawberry Tart
To prepare a delicious cheesecake with strawberries, start by gathering all the necessary ingredients. You will need 500 g of cottage cheese or mascarpone cheese, 200 g of sour cream, 150 g of sugar, 4 egg yolks, 1 packet of vanilla sugar, 4 egg whites, and a sheet of pastry for the tart. Make sure you also have some fresh strawberries on hand, about 300 g, to add a touch of freshness and color.
Start by mixing the cheese with the sour cream, sugar, egg yolks, and vanilla sugar in a large bowl. Use an electric mixer to achieve a creamy, homogeneous mixture. It is essential that all ingredients are well integrated, so that no lumps remain in the mixture. While the mixer is working, prepare the egg whites. Beat them separately until you achieve a firm foam, which will add an airy texture to the cheese cream. Once the egg whites are beaten, carefully add them over the cheese cream, gently folding with a spatula to avoid losing air from the egg whites.
After obtaining a homogeneous mixture, wash the strawberries under a stream of cold water. Once cleaned, cut them in half and let them drain on a kitchen towel to remove excess water. This will prevent the tart from becoming watery.
Now, prepare a round baking pan with a diameter of 24-26 cm, lining it with parchment paper or greased with butter. Place the sheet of pastry in the pan, making sure to spread it evenly, covering the edges as well. Pour the cheese cream into the prepared pan, ensuring it is distributed evenly. On top, arrange the strawberry halves, carefully sprinkling them to create a pleasant appearance.
Preheat the oven to 180°C and bake the tart for about 30 minutes. During baking, you will notice how the pastry becomes slightly golden, and the enticing aroma will spread throughout the kitchen. When the tart is done, take it out of the oven and let it cool completely before slicing. It can be served plain or with a dollop of sour cream on top.
