Country Pasta
Ingredients: -400 g cherry tomatoes -6 cloves of garlic -salt and pepper to taste -3 tablespoons of olive oil -5-6 tablespoons of vegetable oil -1 can of pasta (450 g) -170 g mascarpone (you can add more cheese) -50-60 g grated parmesan -a few flakes of dried hot red pepper -15-16 stalks of chives -300-350 g chicken (breast or thigh)
Our delicious recipe for pasta with cherry tomatoes and chicken is a perfect combination of flavor, texture, and color that will delight any meal. It all starts with the cherry tomatoes, which should be carefully washed and halved. These, along with a few cloves of garlic, are placed in a baking dish. Don’t forget to season them with salt and pepper to taste, then drizzle with olive oil. The oven should be preheated to a high temperature so that the tomatoes roast evenly without burning. Leave them in the oven for 10-15 minutes until they soften and release their juice, but without turning brown.
Meanwhile, prepare the pasta. Put a large pot of water on the stove, add salt and a little vegetable oil. When the water starts to boil, add the pasta and cook according to the package instructions. When the pasta is ready, drain it, but remember to keep a cup of the cooking water. Put the pasta back in the pot and add a splash of oil to prevent sticking.
Next, take the chicken, wash it, and cut it into small cubes. In a skillet, sauté the chicken in a little oil, adding salt and pepper to enhance its flavor. Once the chicken is cooked, remove it from the skillet and add it to the pasta along with the mascarpone cheese. Put the pot on the heat and gently stir to allow the cheese to melt and combine with the pasta.
Gradually add a ladle of the reserved water, stirring continuously. This step is essential as it helps form a smooth sauce that binds all the ingredients together. Be careful not to add too much liquid at once; it’s better to add a little at a time to achieve the desired consistency.
When the tomatoes are ready, take the baking dish out of the oven, and the roasted garlic should be minced. Add the garlic and chopped spring onion over the pasta, along with chili flakes for a touch of heat. Don’t forget to add the roasted tomatoes, gently mixing to avoid crushing everything. Finally, sprinkle grated parmesan and check the taste, adding more salt or pepper if necessary.
Divide the mixture into greased ramekins, each intended for one serving. If there is leftover pasta, place it in another oven-safe dish and freeze it for a future meal. On top of each cup, sprinkle grated parmesan and place them in the oven to gratin for 15-17 minutes until the cheese melts and turns golden.
To serve, garnish each portion with a few roasted tomatoes and offer them alongside toasted bread drizzled with olive oil and garlic, along with a glass of quality red wine. This recipe will not only satisfy your taste buds but also create memorable moments with loved ones. Enjoy every bite!
