Steps to prepare plum jam:
1. Preparing the ingredients: Start by washing the plums thoroughly, then remove the pits. If you received plums with pits, don’t worry, it's an easy task! So, cut the plums in half and scoop out the pits with a spoon or knife. Once you’re done, you should have about 4.5 kg of pitted plums.
2. Chopping the fruit: Use a food processor to chop the plums, creating a smooth paste. This step will help release the juice from the fruit and facilitate cooking.
3. Cooking the jam: Preheat the oven to 120 degrees Celsius. In a large pot, add the plum paste and sugar. Mix well so that the sugar dissolves evenly. Cover the pot with a lid and place it in the oven. This slow cooking process will help the plums caramelize and develop a deep flavor.
4. Baking in the oven: Let the jam simmer for about 8 hours, stirring occasionally (about 2-3 times in total). It’s important not to worry about any sticking to the bottom of the pot, as slow cooking in the oven prevents this. You will notice how the jam reduces by half, becoming thick and fragrant.

7. Slow cooling: Screw the lids tightly on the jars and wrap them in a blanket to cool slowly. This process will help with additional sterilization and keep the jam fresh for a longer period.
