The puff pastry thaws at room temperature and, once soft, is gently rolled out with a rolling pin to achieve an even thickness. It is then divided into two equal sheets that will form the base of our delicious parcels. While the dough rests, we can prepare the flavorful filling.

The red onion is peeled and finely chopped, being careful not to cut our fingers. The garlic is also peeled and then finely chopped to release its intense flavors. The Philadelphia cheese is allowed to reach room temperature for easier mixing into the composition.

In a pan, coconut oil is added, which will provide an exotic taste to the dish. The oil is heated over medium heat and the chopped onion is added. It is sautéed lightly until it becomes translucent, at which point it releases an enticing aroma. Then, the spinach is added, which must be thoroughly washed to remove any impurities. Salt and pepper are sprinkled to taste, and the chopped garlic is added later. Everything is sautéed for a few minutes until the spinach significantly reduces and loses its volume.

Meanwhile, the Philadelphia cheese is mixed with 2-3 tablespoons of pesto sauce, creating a creamy and flavorful mixture that will enrich our parcels. The spinach mixture is divided into 8 equal portions, each intended for one parcel.

For assembly, on each half of the dough, a portion of spinach is placed, followed by a slice of well-washed and dried salmon. On top of the salmon, a portion of the cheese mixed with pesto is spread with a knife, and then another portion of spinach is added. The edges of the dough are brushed with beaten egg, and the parcel is sealed tightly, taking care not to leave any air inside.

The formed parcels are placed on a baking tray lined with parchment paper and are placed in a preheated oven at 200 degrees Celsius. They are baked until the dough turns golden and crispy, and the flavors blend perfectly.

They are served warm, alongside a fresh green salad, which will add a pleasant contrast. If you want to impress, you can decorate the parcels with dough flowers or other cute arrangements, brushing them with beaten egg before baking for a shiny appearance. Thus, you will obtain not only a tasty dish but also an attractive one, perfect for any occasion.

 Ingredients: 3-4 fillets of fresh salmon with skin removed, 3-4 handfuls of spinach (the leaves are smaller), 1 red onion, 2 cloves of garlic, 3 tablespoons of pesto sauce (instructions at the end), 225 g of Philadelphia cream cheese, 2 sheets of puff pastry, 2 tablespoons of oil, 1 egg for brushing, salt and pepper to taste.
