Ingredients:
- 1.5 liters of milk
- 20-30 ml of lemon juice
- 24 ladyfingers (approximately 200 g)
- 4 eggs
- 6-8 tablespoons of milk

- 400 ml liquid cream
- 300-400 ml coffee (sweetened to taste)
- Cocoa powder for decoration
- Optional: rum for flavoring the coffee
Preparation:
1. Preparing the cheese from milk
Start by pouring the milk into a large pot and bringing it to a boil. Once the milk boils, add the lemon juice. Don’t worry if the milk curdles; this is the desired process!
Prepare a strainer covered with a cloth or cheesecloth, where you will let the cheese drain. Let the cheese drain for at least an hour. In the end, you will obtain a white, fluffy cream, perfect for Tiramisu.
2. Preparing the meringue
In a separate bowl, separate the egg whites from the yolks. Beat the egg whites until stiff, then gradually add 140 g of sugar. Continue mixing until the egg whites become glossy and very firm.
Place the bowl over a double boiler and beat the egg whites for 8-10 minutes, as for meringues. Then, let them cool.
3. Preparing the yolk cream
In another bowl, combine the yolks with 60 g of sugar and 6-8 tablespoons of milk. Mix well and then place the bowl over steam. Stir constantly for 10 minutes. When the mixture becomes homogeneous and cools down, add the cheese obtained from milk, vanilla, and lemon zest. Mix very well to obtain a fine and fragrant cream.
Then, gently fold the beaten egg whites into the yolk cream, being careful not to lose the air in the mixture.
4. Whipping the cream
Whip the liquid cream until it becomes firm, adding a small amount of sugar to taste. Fold the cream into the yolk mixture, stirring gently to maintain the airy texture.
5. Assembling the Tiramisu
In a dish (approximately 20x30 cm), add a thin layer of cream to the bottom. Then, dip each ladyfinger in the sweetened coffee (optionally, you can also add rum for extra flavor) and arrange them in the dish in a single layer.
Spread half of the cream over the ladyfingers and, if desired, grate a bit of chocolate on top. Continue with another layer of coffee-soaked ladyfingers, followed by the remaining cream. Finally, dust generously with cocoa.
6. Chilling and serving
Cover the dish with plastic wrap and let the Tiramisu chill for 10-12 hours. This resting time is essential for the flavors to blend perfectly.
When ready to serve, cut the Tiramisu into portions of about 7x7 cm and enjoy every bite!
