Those of you who have had the chance to travel through Spain know that there is a true passion for garlic sauce, known as alioli. This delicacy is a perfect accompaniment for a variety of dishes, but it can also be enjoyed simply on a slice of bread as a delicious snack. In my village, where I lived for a while, there is a restaurant renowned for its alioli, which was different from what you usually find. It had its specificity in the fine texture, resembling a foam, white in color, which was milder than the traditional version.

Curiosity led me to find out the secret of this alioli, and after several attempts, I managed to get my kitchen friend to reveal the recipe. The necessary ingredients are simple, but the key to success lies in the preparation method. We need sunflower oil or seed oil, cold whole milk, garlic, salt, and white vinegar. Don’t forget to use an immersion blender, essential for achieving the desired fine texture; other types of mixers can cut the composition, and the result will not be the same.

In a tall container compatible with the blender, add two-thirds of the oil and one-third of the milk. When you have about a cup of liquid, add two large cloves of garlic if you want a stronger alioli. If you prefer a milder alioli, one clove will be sufficient. Add a pinch of salt and a small teaspoon of white vinegar. Then, turn on the blender and blend carefully until the mixture becomes an airy foam. It is important to slightly tilt the blender to evenly chop the garlic.

If you notice that the alioli does not emulsify properly and remains a liquid paste, do not worry! An effective trick is to add a slice of dry bread, soaked in milk and well squeezed. This will help thicken the composition. Although the fine texture will be slightly affected, you will obtain a delicious alioli that can be consumed without problems. Some restaurants use bread from the beginning to reduce the amount of oil used, which is an excellent strategy.

Now that you have the recipe, all that’s left is to try it and enjoy homemade alioli, perfect to accompany various dishes, from fish to vegetables or simply on fresh bread. I hope you like it!
