Delicious Crocobail Recipe - a crocodile stuffed with apples and cinnamon flavor

Crocobail is a creative and playful recipe, perfect for bringing smiles to the little ones' faces, but also for delighting adult tastes. This crocodile-shaped cake is not only attractive but also extremely tasty, combining the sweetness of apples with the warm aroma of cinnamon. In this recipe, I will guide you step by step through the preparation process, including useful tips for achieving a perfect result.

Preparation time: 30 minutes
Baking time: 25 minutes
Total time: 55 minutes
Servings: 6-8

Ingredients

For the starter:
- 1 packet of dry yeast
- 1 tablespoon of sugar
- 4 tablespoons of warm milk
- 2 tablespoons of flour

For the dough:
- Prepared starter
- 2 beaten egg yolks
- 2 tablespoons of honey
- 3 tablespoons of sugar
- ½ cup of milk
- 50 g of melted butter (about half a stick)
- Flour as needed (about 400-500 g, enough to obtain a non-sticky dough, the consistency of earlobe)

For the filling:
- 6 apples
- 4-5 tablespoons of sugar
- 1-2 tablespoons of cinnamon
- Vanilla (optional)

Instructions

1. Preparing the starter:
In a small bowl, combine the dry yeast with sugar and warm milk. Gently mix and add flour. Let the starter rise in a warm place for 10 minutes until bubbles form on the surface.

2. Preparing the dough:
In a large bowl, add the risen starter, beaten egg yolks, honey, sugar, milk, and melted butter. Starting with a small amount, incorporate flour until you obtain a soft but non-sticky dough. Knead the dough for a few minutes, slapping it against the work surface to develop its elasticity. Cover the bowl with a clean towel and let the dough rise in a warm place for about 30-40 minutes.

3. Preparing the apples:
While the dough is rising, peel the apples, remove the seeds, and cut them into small cubes. In a skillet, add the chopped apples, sugar, and cinnamon. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the apples become slightly soft. If the apples are too juicy, add a few tablespoons of semolina to absorb the excess moisture.

4. Forming the Crocobail:
After the dough has risen, roll it out on a floured surface, forming a thin sheet. Using a knife, cut the edges of the sheet to create a crocodile design (you can draw inspiration from images). Place the apple filling in the center of the sheet, leaving enough edges to close the crocodile. Pinch the edges of the dough, folding them over the filling and shaping a playful crocodile. Use leftover dough to create eyebrows, legs, and eyes (you can use goji berries or raisins for eyes).

5. Baking:
Preheat the oven to 180 degrees Celsius. Place the Crocobail on a baking tray lined with parchment paper. Brush the surface with beaten egg to achieve a golden crust. Bake for about 25 minutes or until golden and fluffy.

Serving suggestions:
Let the Crocobail cool slightly before slicing. It is delicious served warm, but also the next day when the flavors have intensified. For an extra touch of flavor, you can add a scoop of vanilla ice cream on the side or a drizzle of caramel sauce.

Variations:
You can experiment with other seasonal fruits, such as pears or peaches, to create various flavor combinations. Additionally, adding some crushed nuts to the filling will provide a crunchy texture and a richer taste.

Crocobail is more than just a dessert; it is a fun and creative cooking experience. It brings together family and friends, turning every meal into a celebration!
