Step-by-step instructions:
1. Preparing the meat: Start by washing the pork fillet well under cold water and then drying it with a paper towel. Cut it into slices about 2 cm thick. This will help the meat cook evenly.
2. Marinating: In a small bowl, squeeze the juice from one lemon and add the crushed garlic, salt, and pepper to taste. Mix well, then add the slices of meat. Cover the bowl with plastic wrap and let it marinate for 15-20 minutes. Marinating is essential as it will make the meat more tender and flavorful.

The meat is cut into thicker slices, we spread mustard on them, then we season them on all sides and place them in a baking dish. We clean the onion and garlic and slice them thinly, sprinkling them in the dish over the meat. We add slices of red pepper. We mix the lemon juice with water and pour it over the meat, also adding thyme. The oven is preheated to 180°C. We place the meat in the oven and let it brown well on both sides.
