To prepare this delicious stuffed potato recipe, we start by peeling the potatoes. Choose medium-sized potatoes that are uniform so they cook evenly. Boil them in well-salted water for 7-10 minutes until they become soft but not fully cooked. This step is crucial to ensure a pleasant texture in the end. After boiling, drain the water and let the potatoes cool so you can work with them without burning yourself.

During this time, prepare the savory filling. Cut the potatoes lengthwise, being careful not to separate them completely. Use a spoon to scoop out the flesh, keeping some of it to maintain the shape. In a bowl, combine ½ of the potato flesh with finely chopped green onion, your favorite herbs like dill or parsley, grated cheese, slices of salami, and diced red pepper. Add a beaten egg and your preferred spices such as salt, pepper, and paprika, mixing well until homogeneous. This filling will be both tasty and nutritious.

Once the filling is ready, fill the potato halves with this mixture, being careful to give them their original shape. Then, use toothpicks to secure them, ensuring that the filling does not leak during frying.

To prepare the beer batter, mix flour with salt, pepper, grated smoked cheese, and eggs, obtaining a homogeneous mixture. Gradually add very cold beer, mixing vigorously to avoid lumps. The consistency should be similar to that of thick sour cream. It is important for the beer to be cold as this will contribute to a crispy crust.

In a frying pan, heat the oil over medium heat. Meanwhile, pass each potato half through flour, then through the beer batter, and if desired, through breadcrumbs. This process will ensure a delicious crust. Fry the potatoes in hot oil, constantly turning them until they become golden and crispy on all sides. Once ready, remove them to an absorbent paper towel to get rid of excess oil.

Don't forget to remove the toothpicks before serving. The stuffed potatoes can be enjoyed warm, alongside a fresh seasonal salad that will add a touch of freshness and color to the meal. This recipe is perfect for a family dinner or to impress guests at a party!
