Tomato Jam - A Surprising Delicacy
Preparation time: 30 minutes
Cooking time: 3 hours
Total time: 3 hours and 30 minutes
Number of servings: Approximately 3 jars of 400 g
Tomato jam is a classic recipe, sometimes overlooked, but it deserves our full attention. I first discovered this delight at my aunt's house, where its sweet and slightly spiced aroma captivated me from the start. This jam not only brings a touch of summer to the cold winter days, but it pairs perfectly with layered cakes, cheeses, and even on buttered toast. Let's embark together on this simple yet characterful recipe!
Necessary ingredients:
- 3 kg ripe tomatoes (garden tomatoes are ideal)
- 759 g sugar
- 30 ml rum (optional, but recommended for an attractive flavor)
Step 1: Harvesting the tomatoes
Choose ripe, meaty, and blemish-free tomatoes. Harvesting from your garden is always the best option, but if you don’t have a garden, look for the freshest tomatoes at the market. Seasonal tomatoes are full of flavor and natural sweetness, essential for excellent jam.
Step 2: Washing and blanching
Wash the tomatoes under cold running water to remove dirt or pesticides. Then, blanch them for 2-3 minutes in boiling water. This process will make peeling much easier. After blanching, immediately place them in cold water to stop the cooking.
Step 3: Peeling and cleaning
Once cooled, peel the tomatoes. Use a sharp knife to remove the skin. Then, cut the tomatoes in half, remove the seeds (as much as you can), and chop them into cubes of about 1-2 cm. These pieces should not be too small; otherwise, the jam will not have the desired texture.
Step 4: Preparing the pot
Choose a thick-walled pot, as this will help distribute heat evenly. Place the tomato cubes in the pot and get ready to add the sugar.
Step 5: Melting the sugar
Add the sugar over the tomatoes. Gently stir and let the mixture sit for about 20 minutes, so the sugar starts to melt and integrate well. This is an important moment, as the sugar will absorb the tomato juice and begin to form the base of the jam.
Step 6: Baking in the oven
Preheat the oven to 160°C. Place the pot in the oven and let it simmer for 90 minutes. This process helps evaporate some of the water, concentrating the flavor and sweetness of the tomatoes.
Step 7: Continuing cooking on the stove
After the 90 minutes in the oven, take the pot out and transfer it to the stove over low heat. Here, it will continue to simmer for another 90 minutes, stirring occasionally. This step is essential, as liquid can evaporate more slowly in the oven. It’s important to stir frequently to prevent sticking.
Step 8: Flavoring
When the mixture starts to thicken, add the rum. This will add a note of complexity to your jam. Let it simmer for another 15 minutes, stirring constantly.
Step 9: Preparing the jars
Thoroughly wash the jars in warm soapy water, then rinse and let them dry. It’s important that the jars are very clean to prevent bacterial growth.
Step 10: Filling the jars
Place the jars on a metal rack to avoid direct contact with the hot surface. Carefully fill the jars with the hot jam, leaving a little space at the top. Cover them with lids and let them sit at room temperature for 24 hours to seal properly.
Personal note:
Tomato jam can be a real surprise on the holiday table. You can experiment by adding spices like cinnamon or cloves to give it an even more exotic touch. It’s also fantastic on a cheese tart or alongside mature cheeses.
Nutritional benefits:
Tomatoes are rich in vitamins C, K, potassium, and folate. Their high antioxidant content, like lycopene, makes them excellent for heart health. The sugar in the recipe adds caloric intake, but the jam is consumed in small quantities, making it a good option for special occasions.
